Cue That Summertime Cilantro Lime “Rice”

I think I just found my new summer staple: Cilantro Lime Cauliflower Rice. If you’re lazy like me, Trader Joe’s was worth the $2 investment and ease of prep. To keep it even simpler, I chopped the stems and leaves together; cilantro adds that bright, fresh taste to the “rice” and pairs so nicely with fresh lime juice. Think a knock-off of Chipotle’s rice that you want to eat by the spoonful.

Ingredients (serves 4).

  • 3 c cauliflower rice, steamed (like Trader Joe’s)
  • 1/2 c cilantro, roughly chopped
  • 1/3 to 1/2 lime juiced to taste
  • Salt to taste

Directions.

  1. Cook cauliflower rice according to package directions or make your own! Once 3 c are steamed and cooked, transfer to a large bowl.
  2. Add cilantro, lime juice and salt to taste with “rice” and toss well.
  3. Dish up 3/4 c servings as a side or as a rice/grain substitute.
  4. Enjoy!
