Mushroom Coffee Latte with Almond Milk 🍄☕️ • I’ve been sipping on @foursigmatic mushroom coffee with frothed almond milk & cinnamon sugar • enjoying this as a first cup of coffee or a late morning pick-me-up • waiting for this GI bug to pass, so I can get back on that coffee train 🚂 #foursigmatic
Breakfast! ☀️ • leftover fajita veggie scrambled eggs, sweet potato home fries, & the last piece of my pumpkin rosemary bread (not pictured is Ted’s plate, which was 100% full & packed to the edges) • add some glorious orange wedges & blueberries • last day at our snowy @airbnb in Vermont
Breakfast in Vermont • I made no-knead pumpkin rosemary bread inspired by @thekitchn, which made great toast • add some avocado, eggs over easy, & Cara cara oranges on the side • great meal to start a 3-day weekend
Not everything is picture perfect • I’ve been obsessed with salad kits lately like the Mediterranean one from @traderjoes • I added some chopped peppers, avocado, red pepper flakes, scoop of hummus & a chopped up mini falafel • add a few pieces of naan or pita on the side & I feel like I just splurged on Sweetgreen!
Butternut Squash Pizza Crust • finally used the crust in my freezer from @traderjoes • with leftover marinara & ricotta from my baked pasta, I added peppers, spinach, & Italian spices • such a quick, yummy meal that satisfies nah #za craving 🍕🥰 #traderjoes
Baked Penne Pasta with Ricotta 🍝 • found a new way to enjoy my @eatbanza pasta — bake it • cook pasta until just al dente, toss with 1.5 c marinara sauce, 1 can cannellini beans, 1 can artichokes (roughly chopped), & 2 c spinach • top with ricotta & bake for 20 min on 350°F or until everything is hot ‘n’ sizzling • practicing a little #hygge with the perfect cozy meal during a Boston snow storm #resolvetoeatmorepasta
