Lemonade with a Kick

My mom had a pitcher of this going when I was home in Maine last week. Naturally I came home with a cold and whipped up a batch of Cayenne Lemonade to clear the airways and stay hydrated. It’s also great mocktail, especially with a 1:1 ratio of lemonade and seltzer for a fizz. I realize that the recipe is completely subjective; my mom made hers sweeter and mine came out a bit more tart. Toss in some lemon slices and cucumber and you have the simplest drink to feel like every day is a spa day.

Cha-cha-cha Chia Blueberry Muffins

I’ve been taking a little hiatus from posting — midterms, the 4th, a summer cold . . . Here’s a recipe for Blueberry Chia Protein Muffins that I made to get me through midterms two weeks ago. I swear I had a childhood blueberry muffin recipe that used orange juice and orange zest. Obviously I had to incorporate that orange flavor into my TIU muffin adaption. It’s subtle and complements the blueberries perfectly.

Not in a Pickle Over Here!

Want literally the easiest way to make pickles ever? I tried this two summers ago and I’m surprised I haven’t posted this sooner. Easy Fridge Pickles! You skip boiling the brining solution and just add everything straight to the jar. Top sandwiches or eat straight out of the jar. I’ve made dill pickles, sweet pickles, spicy pickles. They’re so easy to tailor and fun to make.

BAM! The Best [Beer] Bread

This might be the best thing since sliced bread! (Sorry I’m not. I just had to 😂). I made this over winter break and just resurrected this recipe. This Beer Bread is great with chili, soups and stews — anything to sop up that juicy broth — or even as an easy side to hearten up a salad for a meal. It’s really fun to play with the flavors of beer. I tried a spiced winter stout, a pumpkin beer and an IPA. The bread doesn’t require any rising thanks to the yeast in the beer. I took this recipe from Gimme Some Oven and she melts butter over the top to give the bread both a golden appearance and a nice crunch. I still copied this, but with a different form cut back the total amount of butter added.

Simply Savory Sesame Chicken

There’s been two things going on with me: 1). I’ve been trying to meal plan and meal prep lately, especially since we had a busy exam schedule this week; and 2). I’ve been craving some really greasy Chinese foods. Ok, maybe not really greasy, but something sweet, salty and savory with an Asian fusion all wrapped into one. I got this idea for Asian meal prep bowls from Damn Delicious, which I especially like because she includes nutritional facts for each serving. I had ingredients for sesame chicken (since Damn Delicious makes a teriyaki chicken) and used Skinny Taste for the chicken, but swapped ground chicken for chicken breasts. I popped everything in the crock pot while studying on Monday, let it brew while reviewing cardiac nursing and dished it up just in time for dinner. Garnished with sesame seeds and green onions, these Slow Cooker Sesame Chicken Brown Rice Bowls are *almost* better than take-out.
