Awesomely Easy Applesauce

IMG_5107If you were like me and bought apples at local orchards and leave with a gorgeous bag of fresh apples, you’ve probably already tackled apple chips or apple crisp — what’s left? Homemade applesauce. Yummm. Even better, take that applesauce one step further and add ginger, cloves, cinnamon, nutmeg and raisins. The cinnamon and cooking apples make your kitchen smell oh-so-inviting. I can honestly say I’ve never made applesauce from scratch before, and I expected a labor-intensive and arduous afternoon. I encountered quite the opposite. Using a food processor cut down on chopping time, and the apples cooked much faster than I anticipated. In fact, this was quite simple. Not Your Average Apple Cider

Apple Cider Moscow Mule
This take on a Moscow mule goes down too easy. Mmmm, it’s that good. While not entirely nutritious, it is quite delicious. No sugary syrups, just local apple cider and fresh lime juice to add to the mix. I also opted for a diet ginger beer.  The ginger is a refreshing diversion from a standard cocktail. (Plus, the copper mugs are just so retro and modern all at once, and they keep your drink perfectly chilled. You’ll want an excuse to pull them out next.) Our family friends were graciously taste-testers, when I debuted this drink, and it was an instant hit. Beautifully Baked Bite-Size Donuts

When I think of apple cider donuts, I think of trips to Wallingford’s Orchard to pick apples and grab a perfectly hot and sticky-sweet donut for the road (or for the walk home to my old house). As good as Wallingford’s are, sometimes you need something homemade, not fried, and readily at hand, not a drive away. Recipe taken from The Friendly Fig, these Mini Apple Cider Donuts are delectably delicious, and they’re bite-size — even better!  They’re sure to delight and be an instant crowd pleaser.
