5 Minute Crispy BBQ Pizza

I’ve been craving pizza lately and when I say craving, I mean CRAVING. I didn’t feel like making a cauliflower crust, I couldn’t find my go-to naan at Whole Foods, and I didn’t want to make dough from scratch. Instead I found Top This! Whole Wheat 13″ Crust in the freezer section. It was thin, crispy, and had a nice char flavor since it’s grilled. I went a little light on sauce/toppings since I wasn’t sure how this crust would hold up, but next time I make it, I can definitely go closer to the edge and add some more BBQ. The honey sriracha BBQ sauce pairs well with chicken sausage to give you a Crispy BBQ Sausage Flatbread.

Can’t Get Enough of These “Stuffed” Sweet Potato Skins

It’s only mid-August, so naturally I’m still on a BBQ kick. Remember that Stonewall Kitchen Honey Sriracha Barbecue Sauce that I picked up after a trip home to Maine? It’s baaaaaack. The sauce is packed with heat and subtly sweet — the perfect pairing with sweet potatoes, right? Sweet potato skins that is. Caramelized onions, tangy BBQ, fresh cilantro are all wrapped into BBQ Chicken Sweet Potato Skins. Like the Buffalo Chicken Zucchini Boats, I lightened up the recipe by adding cauliflower and baby spinach and reducing the cheese. I also have big plans for the scooped out inside of sweet potatoes — I think a sweet potato pizza crust may be in the future. . .

Bringing BBQ Salads Back

I’m coming out of a hiatus! With my full-time job wrapped up and my fun-employment commencing, i.e. taking care of business for the month for August before my nursing program begins, I’m finally writing these joyful introductions for my blog posts — like this one for a BBQ Chicken Salad with Cilantro Lime Dressing. After a trip home to Maine and a stop at Stonewall Kitchen in Portland, I picked up their Honey Sriracha Barbecue Sauce in anticipation of making a BBQ chicken salad. The BBQ sauce is packed with heat and subtly sweet. The dressing was inspired by a local Mexican restaurant and was the perfect combo of light and fresh to complement the BBQ flavor. Say hello to your new favorite summer salad.

Open Faced BBQ Chicken Sandwich with an Apple Slaw (& Sweet Potato Fries)

Open Faced BBQ Chicken Sandwich with an Apple Slaw (& Spicy Garlic Sweet Potato Fries). Try saying that title five times fast. I lightened up your traditional sandwich by making it oped faced and adding multigrain bread. Who has BBQ without fries or chips? Not me. I added some baked sweet potato fries tossed with garlic and spicy red pepper flakes. The apple slaw is worth trying alone. If you’re feeling particularly creative, I’d add some lemon zest to the slaw for that extra pop of flavor, which I did not do. but that’s why there’s next time . . . The slaw is light and fresh with a bit of crunch to balance the acidity and tanginess from the BBQ sauce. With sweet apples and fresh lemon juice, you won’t be able to take just one bite!
