Simply Savory Sesame Chicken

There’s been two things going on with me: 1). I’ve been trying to meal plan and meal prep lately, especially since we had a busy exam schedule this week; and 2). I’ve been craving some really greasy Chinese foods. Ok, maybe not really greasy, but something sweet, salty and savory with an Asian fusion all wrapped into one. I got this idea for Asian meal prep bowls from Damn Delicious, which I especially like because she includes nutritional facts for each serving. I had ingredients for sesame chicken (since Damn Delicious makes a teriyaki chicken) and used Skinny Taste for the chicken, but swapped ground chicken for chicken breasts. I popped everything in the crock pot while studying on Monday, let it brew while reviewing cardiac nursing and dished it up just in time for dinner. Garnished with sesame seeds and green onions, these Slow Cooker Sesame Chicken Brown Rice Bowls are *almost* better than take-out.

Bringing BBQ Salads Back

I’m coming out of a hiatus! With my full-time job wrapped up and my fun-employment commencing, i.e. taking care of business for the month for August before my nursing program begins, I’m finally writing these joyful introductions for my blog posts — like this one for a BBQ Chicken Salad with Cilantro Lime Dressing. After a trip home to Maine and a stop at Stonewall Kitchen in Portland, I picked up their Honey Sriracha Barbecue Sauce in anticipation of making a BBQ chicken salad. The BBQ sauce is packed with heat and subtly sweet. The dressing was inspired by a local Mexican restaurant and was the perfect combo of light and fresh to complement the BBQ flavor. Say hello to your new favorite summer salad.

Easy Peasy Hearty Minestrone Stew

Quinoa Minestrone Stew

This stew is brilliant. My cousin, Betsy, always shares healthy and hearty recipes with my mom. We made this stew last winter after Betsy’s suggestions. After all the holiday indulgences (and over-eating), we decided to resurrect this veggie, vegan, gluten-free stew. Although technically a soup, it’s loaded with beans, carrots, celery, tomatoes, peppers, zucchini, kale . . . the list goes on and is so hearty I’d like to swap the name from soup to stew. While my mom did all the cooking, it’s delicious to share, especially right before the New Year. Hope you enjoy this fresh, packed fully of veggies, you-won’t-go-hungry Quinoa Minestrone Stew.
