Want literally the easiest way to make pickles ever? I tried this two summers ago and I’m surprised I haven’t posted this sooner. Easy Fridge Pickles! You skip boiling the brining solution and just add everything straight to the jar. Top sandwiches or eat straight out of the jar. I’ve made dill pickles, sweet pickles, spicy pickles. They’re so easy to tailor and fun to make.

Holy Guacamole

Guacamole is an instant crowd-pleaser, and it’s so easy to make! This recipe allows the natural creaminess of the avocados to speak for itself without any added sour cream, yogurt or mayo; Homemade Guacamole smooth and rich enough as is. Easy-Bake Corn on the Cob

When I was living in Ithaca, my roommate, Alex, showed me this quick, but different way to have corn on the cob. She baked it! Lightly brushed with olive oil, salt and pepper, this is a perfect side. This is also great to make ahead of time. You can cut the corn off the cob and freeze it for salads, stir fry, pasta, a standalone side, salsa . . . So brilliant that I can’t believe I never thought to roast corn in the oven. Plus, Oven-Roasted Corn turns out to be quite tender and full of flavor!
