Lemony Oatmeal Bake with Maine Blueberries

A breakfast just in time for the end of summer. These are the blueberries from my parent’s house in Maine. We have blueberry bushes in the backyard and I always associate picking them with mid to late August, nearing the end of summer. These blueberries tend to be a bit tart, so baking them seemed ideal. Last summer and this summer, I liked to meal prep my breakfast to give me more time to sleep and less time assembling and cooking in the mornings before work. Oatmeal bake has been a staple, topped with Greek yogurt and drizzled with maple syrup. I love using my Maine blueberries and the bright addition of citrus for Lemon Blueberry Oatmeal Bake.

Healthy chocolate muffins!? Is this a thing? Absolutely. I feel like I’ve been killing this muffin meal prep game. I love having these as a snack or before a workout. Mixed Berry Chocolate Protein Muffins are no exception. You satisfy your chocolate craving as a yummy breakfast or snack. I used my strawberry rhubarb compote to act as the berries, but feel free to use mashed raspberries instead; plus, I don’t know about you, but there’s something I love about the way blueberries bake into muffins.

It’s a heat wave in Boston. Cool down with this vibrant Berry Beet Smoothie. Look at that color! The magenta is amazing, and you can’t even taste the beet. The mango and berries leave it perfectly sweet. Enjoy this smoothie as breakfast or a snack – -it’s utterly refreshing either way.

Mango Ginger Overnight Oats

I’m still on my mango kick after my trip to Florida a few weeks ago. Why not incorporate some mango into overnight oats? Cue the ground ginger and you have an unusually good combination of flavors. The sweetness from juicy, ripe mangos means no added sweetener is needed. (Doesn’t mean you can’t add more, but you probably don’t need to.) Cue the ground ginger with fresh berries and you have an unusually good combination of flavors with this Mango Ginger Overnight Oats.

Spring Avocado & Cucumber Salad

I used to make salads all the time last year and they always involved fresh mozzarella, avocado and some sort of fruit. Usually over spinach, toss in some walnuts or almonds and add some chicken or turkey. This salad needed less; it needed to be simple and basic, but not in taste. I wanted a spin on a caprese-like salad but chopped and easy to eat. Fresh ingredients prepared in an obvious way creates the Spring Avocado & Cucumber Salad.

Decadently Different Ginger Lemon Zest Oatmeal

Ginger Oatmeal with Lemon Zest

This Ginger Oatmeal with Lemon Zest seemed decadently different. I have a lot of fresh ginger kicking around from making Cranberry Orange Tea with Ginger and the peanut sauce for the Asian Peanut Zucchini Noodles. Freshly grated ginger is a bit stringy, so I used a combination of ground and fresh ginger to get the taste. The lemon zest adds a bright flavor and then topped with blueberries and juicy pomegranate seeds and your tastebuds won’t know what hit them.

Craving Quinoa for Breakfast

Vanilla Quinoa Breakfast Bowls

I saw this recipe on Skinny Taste at the end of last fall and I was a bit skeptical. Quinoa, at least red quinoa, has that bitter taste to it. I wasn’t sure how it would perform as a breakfast dish. I think we can all agree I’ve explored the oatmeal and steel-cut oats options quite thoroughly, so I thought why not give it a try? Plus, it’s a different gluten-free breakfast option. Cutting the quinoa directly in almond milk, vanilla, cinnamon and agave could the quinoa a different twist from its bitter profile. Add fresh fruit and bam! The Vanilla Quinoa Breakfast Bowls were born.

You put whatever you want in the middle and it seeps into the surrounding water; it’s so tasty and refreshing. Poached Berries

Poached Berries are great — so easy to make, full of flavor, and can be made ahead of time. Another recipe my mom showed me (thanks, Mom!). The berries are especially tasty because by poaching them, you remove the hassle of washing each serving and decrease the time fresh berries will perish; instead, everything’s done in one step and viola! fresh berry sauce for days. Based on my new obsession with chia seeds and breakfast bowls, poached berries paired with overnight oats and chia seeds seemed like a natural combination.
