Killin’ It with These Korean Rice Bowls

Happy meal prep with these popping flavors! The spiciness from the meat, the sesame from the spinach, the acidity of the kimchi . . . Although seemingly complicated, I really enjoyed the simplicity of this Korean Bibimbap Bowl. Bibimbap is a Korean rice dish served with seasonal fresh or sautéed vegetables, a red chili paste and an egg. Here’s a healthy (but definitely not authentic) twist using ground turkey, jasmine brown rice and fresh veggies. This is not your traditional bibimbap, since I swapped ground turkey for ground beef. I added a poached egg because I was lazy about cleaning another pan by frying an egg, and I’m trying to perfect my patching technique in the microwave. I found jarred kimchi at Trader Joe’s for quite cheap. Plus, you have it on hand and you’re not fussing about pickling napa cabbage and making something extra.

The One Pot Wonder: Rice & Veggie Detox Soup

Yesterday was such a gross Monday and today is a rainy, dreary Tuesday. I made a big ol’ batch of this Brown Rice Veggie Soup last night using some pantry ingredients and some of the veggies I need for slow cooker buffalo chicken bowls tonight (recipe coming soon!). The soup just came together with no real plan. It’s so fun to toss in a little of this . . . a little of that . . . and watch everything come together. I added a little vindaloo curry to taste since the soup already smelled like these flavors would compliment the garlic and ginger well. The brown rice and copious amount of veggies make a hearty soup you can’t wait to have.

Mad for this Homemade Massaman Curry

Not my prettiest of shots, but man, the flavors are there. I love ordering Chicken Massaman Curry when I’m feeling Thai takeout (or the original version of Basil Drunken Noodles or No Fish Sauce Pad Thai), but sometimes, you need all the flavors without the delivery fees. It’s savory, a bit peanut buttery and just plain good curry. Compared to takeout, this curry is less salty, swaps brown for the usual white rice and cuts the fat by using less oil and light coconut milk. I also added a bit more nutrients and flavor with sweet potato instead of potatoes. I saved time using pantry staples like pre-made red curry paste and canned diced tomatoes. I also had rotisserie chicken to use for the week, but I may have to try this with tofu next time. This curry dish is really quite easy using what you probably have in your pantry. Plus, it’s a fun dump-and-run kind of dish, which lets the flavors meld and heighten all on their own.

Stoked for Sushi Stacks

I’ve died and gone to sushi heaven. These Tuna Sushi Stacks are to die for. I’ve been eyeing this recipe on Skinny Taste since last summer and have always made a deconstructed version, since the stack never quite works out for me. This time, I went for the full deal — still obviously struggled with keeping the stack neat — and added mango and carrots to my top layer. The sweet addition from the mango was a great decision. I’ve stocked up on mangos lately since Whole Foods has had the 5 for $5 sale. Swapping brown for white rice and adding rice vinegar allows the rice to get “sticky” like you find in sushi restaurants without adding sugar to achieve the same effect. Overall, the sushi stack was tangy, sweet, savory and salty. Also, it’s light, yet filling and satisfies all of your sushi cravings while being homemade and on a budget.

Craving These Slow Cooker Burrito Bowls

My mom has been raving about this lentil chili she made this past winter that called for smoked paprika. I keep seeing recipes call for this spice, and I came across a recipe for slow cooker burrito bowls, which — ding, ding, ding! — called for smoked paprika. Given that it’s been unseasonable cold here and that I wanted some meal prep for a busy start of the week, I pulled out the crock pot and made Slow Cooker Sweet Potato Burrito Bowls. I totally want to make these with chicken next time, but I’ll need a bit more foresight to thaw the chicken from my freezer. Instead, I tossed in sweet potatoes and made these bowls with brown rice and black beans for a yummy dish. These have a risotto-like consistency and I found myself adding more homemade vegetable broth than expected. The smoked paprika pairs so well with the black beans and sweet potato; it gives the bowls a flavor similar to chorizo, but keeps it vegetarian.

Slowly Cooked to Perfection Coconut Curry Chicken

I’m on a slow cooker kick, especially with these one bowl meals. (Well, this isn’t quite a one pot dinner, but it doesn’t mean it isn’t easy.) Mmmmm, delicious Slow Cooker Coconut Curry Chicken. Especially with exams coming up, it’s so easy to let the chicken cook all day and then just whip up the bowls at night. I used frozen cauliflower and peppers for less chopping and to save time. It’s so easy to have frozen veggie on hand! I always have cauliflower stocked in my freezer. Let the rice cook while the coconut curry chicken warms and you can kick back and relax (or in my case study).

Simply Savory Sesame Chicken

There’s been two things going on with me: 1). I’ve been trying to meal plan and meal prep lately, especially since we had a busy exam schedule this week; and 2). I’ve been craving some really greasy Chinese foods. Ok, maybe not really greasy, but something sweet, salty and savory with an Asian fusion all wrapped into one. I got this idea for Asian meal prep bowls from Damn Delicious, which I especially like because she includes nutritional facts for each serving. I had ingredients for sesame chicken (since Damn Delicious makes a teriyaki chicken) and used Skinny Taste for the chicken, but swapped ground chicken for chicken breasts. I popped everything in the crock pot while studying on Monday, let it brew while reviewing cardiac nursing and dished it up just in time for dinner. Garnished with sesame seeds and green onions, these Slow Cooker Sesame Chicken Brown Rice Bowls are *almost* better than take-out.

Devilishly Delicious Indian Curry Vindaloo

Coconut Curry Vegetables with Brown Rice

Happy Meatless Monday, everyone! I found another winning dish on PinterestCoconut Curry Vegetables with Brown Rice. I’ve never made anything with curry and coconut milk, but I’m so glad I did. The coconut milk gives a creaminess and subtle flavor to complement the spices in the vindaloo curry. It’s hot and spicy, complex and creamy all in one bite. Toss in the vegetables and you’re good to go. I found this article on Time last week about why Indian food is so delicious. (Ok, so this isn’t Indian per se, but it still embodies that complex flavor profile that we know and love.) I knew it was a sign — I just had to make this.

Scrumptious Sesame Salmon Bowls

I think I’ve had an Asian cuisine-inspired kick lately. First, the Daikon & Carrot Salad. Then, the Pho Soup. Now, these Sesame Salmon Brown Rice Bowls. This Sesame Curry Marinade for salmon is my go-to all by itself. It’s absolutely delicious, especially on grilled salmon in the summer, accompanying grilled vegetables. It’s my mom’s recipe, and you almost never need to find another marinade because it’s that good. It originally calls for toasted sesame seeds, but she found the seeds mostly burn while cooking so she substituted sesame oil. It may even be good as a salad dressing — who knows! As one of my last meals at home before moving to Boston, my mom combined this Sesame Curry Marinade with salmon, brown rice and fresh veggies. What a keeper. It was somehow light and heartier, flavorful and packed with veggies. I’m sure this will crop up in the future with new vegetable combinations.
