Do you ever make something and you’re actually excited for your leftovers and to eat it again? That was this. I give you Cilantro Lentils & Quinoa with Raisins and Walnuts. This can be a side or a base to a meal. You can mix in feta or goat cheese. This would go quite well with roasted root veggies. Pair with grilled chicken. You literally can’t mess it up. I roasted potatoes, beets, and spinach and added some feta for a meal or kept it cold and mixed it into a spinach salad with a lemony vinaigrette. It works well with parsley instead of cilantro for all of you who are cilantro adverse, but fresh herbs with lemon juice and lemon zest keep this light and bright.

Lemony Protein-Packed & Plant-Based Soup (Instant Pot)

I may be the only person enjoying April’s cold spell last month. It was a great time to meal prep lunch recipes for work and sample some hot soups. I quite enjoyed this take on a plant-based soup that with the addition of lentils, is packed with protein. Harissa adds a unique flavor and spice along with lemon, ginger, cumin, and turmeric. Using the Instant Pot, this Lemony Lentil & Butternut Squash Soup is rich and creamy without any added dairy and comes together quickly, easily cooking the carrots. squash, and lentils. It’s the soup you need when you’re looking forward to spring on a crisp day.

Enjoying These Easy Enchiladas

Now that I’ve made homemade enchiladas, the filling and flavor combinations are endless. These Turkey, Spinach, & Black Bean Enchiladas are hearty, bursting with flavor, and easy to make. I’d consider these enchiladas to be a “lightened up” version since they’re full of lean animal and plant-based protein, use corn tortillas, and you make your own enchilada sauce from scratch in under 5 minutes. Full disclosure: Ted bought a large bunch of cilantro and we’re were purposefully trying to use it up. This recipe is very cilantro heavy since 1). it adds a burst of flavor quite effortlessly; and 2). waste not. If you’re not a cilantro fan, don’t worry! Just omit cilantro, but it do add a flavor like no other.

Munchin’ on Mushroom Pho

Oh, pho. It’s the perfect type of soup when you want something high in nutrients with a bright, fresh taste–especially when one has a cold (like I unfortunately do). Pronounced fuh, pho is a Vietnamese soup of broth, noodles, protein, and herbs. I’ve made a tofu pho and beef version with zoodles, but have been craving a version without the meat. A while back when I was visiting Philadelphia, my mom and I enjoyed a meal at V Street, were we had BBQ carrots that were wonderfully savory and “meaty.” With that as an inspiration, sautéed mushrooms and carrots act as the “meat” in this Mushroom Pho with Black Rice Noodles giving it a rich flavor. It’s brightened up with fresh Thai basil, cilantro, and lime juice, while black rice noodles give it a unique twist and a chewy texture.

Hearty Roasted Veggie Bowls for Winter

I love a good “bowl.” I think it’s easy to prep and to grab on-the-go. I like using produce that’s in season and rainbow carrots and sweet potatoes definitely fall into this category. Root veggies absorb the minerals from the soil around them. Given their colorful nature, they’re packed with fiber, vitamins like vitamin A, and antioxidants. If you can do three things at once, these Roasted Root Veggie Bowls with Cilantro Pesto are definitely worth it. Roast the veggies while the lentils and quinoa cook. At the end, you have a flavorful bowl served warmed to combat winter’s chill and topped with a fun, different pesto.

Delicious Cilantro & Curry Noodles with Zoodles

Oh my goodness, can I eat this again? Is it tomorrow yet? I’ve been meaning to pick up some red curry paste since I usually have it on hand, but I’ve honestly been out since maybe the fall? Oops. I was thinking I’d make my crispy coconut tofu bowls for this week, but alas, I was at Trader Joe’s on Monday and their red curry sauce — trying something new! — just called my name. Add the zucchini I intended for the coconut tofu, toss in peppers I had, some brown rice noodles I have from my pantry . . . the rest is history. I folded in a generous, generous amount of cilantro and that paired with lime juice made this dish pop! Thai Red Curry Cilantro Noodles will be your new go-to pasta dish when you want a healthy version on takeout in the comfort of your own home.

Mango & Chicken Bowls with Coconut Cilantro “Rice”

Remember that cilantro lime cauliflower rice? I had a special plan for it for these Curry Chicken Bowls with Mango & Coconut Cilantro “Rice.” You know me; I’m a big fan of fresh, light meals that are still filling. This combination of sweet mango with fresh cilantro and coconut “rice” seemed fitting after a quick vacation on Sanibel Island, Florida. If I had a grill, this bowl would be complete with the charred, smoky flavor grilling the chicken would add. But alas, baking the chicken still kept it juicy and an easy meal prep.

Cue That Summertime Cilantro Lime “Rice”

I think I just found my new summer staple: Cilantro Lime Cauliflower Rice. If you’re lazy like me, Trader Joe’s was worth the $2 investment and ease of prep. To keep it even simpler, I chopped the stems and leaves together; cilantro adds that bright, fresh taste to the “rice” and pairs so nicely with fresh lime juice. Think a knock-off of Chipotle’s rice that you want to eat by the spoonful.

Hearty, Feel-Good Plant-Based Curry Soup

Want a soup that immune-boosting? Stress-relieving? Energizing? Anti-inflammatory? According to Daily Harvest‘s Carrot + Coconut Curry Soup, it’s all of those things wrapped into a yummy bowl of soup. I tried Daily Harvest on a whim, and it didn’t disappoint. Completely fresh ingredients delivered to your door as soups, smoothies, overnight oats, chia parfaits and grain bowls. You add liquid (if needed) and heat them up or blend them. I enjoyed their soup so much (that besides ordering it again), I tried making a big-batch copycat version. This didn’t look quite as colorful and delectable as Daily Harvest’s, but it’s a pretty damn close copycat. Zucchini Coconut Curry Soup is a hearty, plant-based soup packed with veggies, spices and flavor, and I added cubed tofu for some protein. I let julienned zucchini star along with carrots, peppers, cauliflower and spinach. Fresh ginger and cilantro add fresh flavor to the curry. This soup must be good when I sent two servings home with my parents and got my mom’s approval. Happy Meatless & Marathon Monday here in Boston! Grab a cup of soup to stay warm on this rainy day!
