Who said you need to buy sweetened yogurt when you can make your own, even better, Banana Walnut Parfait? Flavored yogurt tends to have as much as 25 g of sugar PER SERVING.Don’t believe me? A delicious snack, light breakfast or dessert, this parfait has less added sugar using plain Greek yogurt as a base, adding only a pinch of agave nectar and plays off of the banana’s natural sweetness.

Oh my goodness. I just died a little. Chocolate-Covered Katie is brilliant. Brilliant, I tell you. You could double this or triple it and it would still be healthier than a muffin from Starbucks or Dunkin. I can’t wait to try out other quick mug recipes — blueberry, cinnamon, pistachio? I tested this for dessert in honor of National Banana Bread Day on Monday. (Who knew that was even a thing?) Banana Bread in a Mug, you’re my new favorite thing.

A New Twist on the Classic Peanut Butter & Bananas

IMG_5785 This oatmeal just seemed right on a cold winter morning. (It was snowing today and 7ºF out.) A peanut butter and banana combination was maybe just what I needed. I wanted a heartier-than-normal oatmeal, so I opted for steel-cut oats instead of old-fashioned for a change. Swirl in some whipped, fluffier peanut butter along with cinnamon and top with a caramelized, gooey banana. The end result? Hurrying for the Holidays with a Gingerbread Latte

IMG_5521 I’m sure you’ve had the infamous holiday drinks from Starbucks — they’re all decadently sweet, rich and bursting with a syrupy flavor. Maybe it’s just me, but I think it’s a tad too sweet and a bit too rich, even though I love how they capture the delicious holiday flavors. Of course, I found a recipe on Pinterest for a copycat Gingerbread Latte, but the recipes called for a simple syrup that required not one, but TWO cups of sugar! Not only that, but then you added 1/4 to 1/2 c of that simple syrup just to your one cup of coffee. Here’s a lightened-up version of the Gingerbread Latte. I made this two ways: 1). combined skim milk with unsweetened vanilla almond milk; and 2). just skim milk, but you can use whatever milk you enjoy the most. Like the Almond Milk Pumpkin Spice Latte, the spices don’t readily blend; that’s why I added only 1/4 t of the gingerbread spice mix, but you can always add more as you’d like for a more robust spice profile. The addition of the ground cloves to the cinnamon and ginger is what makes this drink a convincing copycat. The key to this latte like any latte is to froth the milk mixture before serving to get that perfect foamy consistency. This Copycat Gingerbread Latte has a much darker coffee profile to become a less-sweet take on the holiday favorite. Chocolatey Cinnamon Heaven in a Bowl

For all you chocolate lovers out there, this Chocolate Chai Oatmeal tastes like chocolatey cinnamon heaven. I added the chia seeds for some extra fiber, protein, antioxidants and omega-3’s. I honestly forgot I added them to the oatmeal at all because they blended in so well. The chocolate chips melt into the oatmeal, creating a luxuriously decadent flavor. The end product doesn’t appear too dark or chocolatey because I reduced the amount of cocoa powder since I added chocolate chips as well. Trust me — all the flavor is there. The cinnamon in the chai tea compliments the chocolate, and the fresh raspberries contribute a tartness to the oatmeal’s sweetness. Sometimes you just need a little chocolate for breakfast.

Beautifully Baked Bite-Size Donuts

When I think of apple cider donuts, I think of trips to Wallingford’s Orchard to pick apples and grab a perfectly hot and sticky-sweet donut for the road (or for the walk home to my old house). As good as Wallingford’s are, sometimes you need something homemade, not fried, and readily at hand, not a drive away. Recipe taken from The Friendly Fig, these Mini Apple Cider Donuts are delectably delicious, and they’re bite-size — even better!  They’re sure to delight and be an instant crowd pleaser.
