This may be my new summer drink, so much so that we made this twice in once weekend. Frozen Coconut Lemonade will be your new favorite drink to cool down and sip a decadent version of lemonade. I made this both as a cocktail and a mocktail. I’d suggest the full-fat coconut milk for a mocktail and using the proportions below for a cocktail. Either way is delicious. It’s sweet, tart, rich, and zesty.

Fresh Mules Just in Time for Happy Hour
My friends over at Copper Mug wanted a healthy Moscow mule made with kombucha, just fresh juice or something all natural. (BTW, they have gorgeous copper ware like mugs, martini glasses, jigger — you name it.) I settled on trying to incorporate Kombucha Gingerade since it’s low in sugar, uses fresh ginger juice and packed with probiotics. The fresh ginger gives is an extra kick. Still want to sip on a cocktail post-holidays, but want a “detox?” Sip on this Kombucha Gingerade Moscow Mule — just in time for happy hour.
Leap into Spring with this Tropical Coconut Cocktail
Who says you can’t celebrate spring? But then again, it’s snowing in Boston today. Ironically enough, my roommate writes for Insane for Drinks, and she posted about Captain Morgan‘s new flavored rums: coconut, pineapple and grapefruit. By flavored, I mean they smell like fresh juice (and taste like it!); they’re beyond delicious. With two mojitos ideas to come, try Coconut Rum with Basil & Strawberries in the meantime. I used coconut water for a healthier mixer and the use of fresh fruit and herbs makes it oh-so-refreshing. Your tastebuds will thank you.

Not Your Average Apple Cider
This take on a Moscow mule goes down too easy. Mmmm, it’s that good. While not entirely nutritious, it is quite delicious. No sugary syrups, just local apple cider and fresh lime juice to add to the mix. I also opted for a diet ginger beer. The ginger is a refreshing diversion from a standard cocktail. (Plus, the copper mugs are just so retro and modern all at once, and they keep your drink perfectly chilled. You’ll want an excuse to pull them out next.) Our family friends were graciously taste-testers, when I debuted this drink, and it was an instant hit.
