Refreshingly Crisp Cucumber Salad

This salad is perfectly refreshing. Light, crisp and just different. How many salads have you had that are just cucumber? Plus, spiralizing any vegetable automatically takes it up a notch. Maybe that’s just me, but it’s different a uniquely fun way to enjoy some veggies. Add the flavors of cilantro, fresh ginger and sesame and this Spiralized Asian Cucumber Salad is sure to cool you down. [Note: this is best consumed within 1-2 days of making, but I doubt that will be a problem because you won’t be able to get enough!]

Coconut Almond Butter Bites

Despite it being a heat wave this summer, I had this urge to bake in July. To be completely honest, I’m not entirely sure why I never posted this recipe. I think I wanted to try it again to perfect it, but I honestly think it’s fine as is. I wanted something still summery (cue the coconut) and something that would keep me sated (hence the almond butter). I wanted a cookie and snack hybrid and somehow stumbled upon Coconut Almond Butter Bites as my end product. Bam!

No Buttah in These Cookies

These Vanilla Greek Yogurt Chocolate Chip Cookies taste like cake.  Scratch that. Better than cake because they’re bite size. They’re super dense without losing any of the flavor of traditional chocolate chips. With the addition of vanilla Greek yogurt, I almost like them more. I tried to lighten up your classic cookie with egg whites, powdered sugar plus coconut sugar and non-fat Greek yogurt instead of butter. They might not be the prettiest cookies, but boy, are they delicious!
