Detox with Berries & Beets

Beets are a vegetable that have slowly grown on me. Their earthy flavor and bright pink color add a unique touch to any meal. They’re high in a photonutrient called betalains, which may help with inflammation and detoxification, and also in nitrates. As beet season is coming to an end, here’s an idea to help use up any extra beets. Naturally sweet, they may not be the obvious choice to add to a smoothie. Pair with berries, peaches, and coconut water, they make a refreshing Beet & Berry Smoothie.

Cool Down with These Mango Popsicles

In honor of the weather hitting the 90’s here today, here’s how I stayed cool this summer: Mango Coconut Popsicles! These popsicle molds from Target were worth the investment. You can make full batches, half batches, mix and match. Popsicles are a great way to “meal prep” some desserts—easy prep to reap the benefits later. They fall more on the icy end of the spectrum instead of creamy, but swap coconut water for coconut milk for a more decadent treat.

Going Green for This Cleansing Ginger Smoothie

Need some feel good food post St. Patrick’s Day boozing? This’ll do the trick, but don’t let the green fool you; there’s nothing that tastes “green” about this. Between midterms and feeling under the weather, I meant to post this on March 17th in honor of St. Patty’s Day, but . . . life — next thing, you know the weekend as flown by! I love this smoothie so much from Tone It Up‘s 5 Day Detox that I’ve incorporated the tweaked version into my weekly repertoire. I’d never have thought that adding a whole piece of peeled ginger root would blend as well as it does AND add such spicy flavor. If I don’t have coconut water, I add almond milk to the mix, and it turns out just find and a little creamier. Trust me: this Cleansing Ginger Smoothie is one you want to sip again and again.

Orange You Glad You Found this Orange Smoothie

Goooooood morning and happy July! Wake up with the randomly delicious combo of an Orange Avocado Mango Smoothie.  The avocado is creamy and adds a natural thickness to the smoothie. The mango adds sweetness, along with the orange, also tossing in a little vitamin C and natural juice. As breakfast or as a snack, it all perfectly blends together into a decidedly different smoothie from your usually berries and banana.

Coconut Watermelon Water, mmmm refreshing. Add some chia seeds if you want to transform this into a Watermelon Fresca. If chia seeds provide a texture that’s not for you, just coconut water and watermelon blended together will do. It’s just two simple ingredients for one insanely hydrating drink.

Coconut Rum with Basil & Strawberries

Who says you can’t celebrate spring? But then again, it’s snowing in Boston today. Ironically enough, my roommate writes for Insane for Drinks, and she posted about Captain Morgan‘s new flavored rums: coconut, pineapple and grapefruit. By flavored, I mean they smell like fresh juice (and taste like it!); they’re beyond delicious. With two mojitos ideas to come, try Coconut Rum with Basil & Strawberries in the meantime.  I used coconut water for a healthier mixer and the use of fresh fruit and herbs makes it oh-so-refreshing. Your tastebuds will thank you.
