Tantalizing Tahini Brownies

I’ve been baking lately. Ted is enjoying batches of brownies, as I try to perfect the recipe and I think I’ve found it. Tahini Brownies. A simple take on brownies using tahini and applesauce as a substitute for butter, while still leaving the brownies fluffy without being dry. Adding seasame seeds to the top gets them nice and toasted as the brownies bake and bring out even more sesame flavor complement that dark chocolate. If you’re feeling extra indulgent, drizzle the top with extra tahini and sprinkle with extra chocolate chips.

Chocolate Chip Cookies + Fig Newtons = These Muffins

These may not be my best looking muffins, but they’re like a chocolate chip cookie and fig newton wrapped into one. They’re dense, the figs are complimented by cardamom and the dark chocolate adds a bittersweet taste. I stumbled upon dried whole figs at a TJ Maxx/Homegoods when home in Maine, but I’m sure you can find them anywhere. As you know, I like making muffins with protein powder so they’re a bit heartier, nutrient-dense and keep me full longer. I reallyyyyy enjoyed these Chocolate Fig Protein Muffins, and they were both friend and boyfriend approved (which are both necessary measures of approval).

To Brownie or Not to Brownie?

I didn’t want to call these brownies because I don’t think of these as a true brownies without chocolate chips, so I settled on bars. Plus, are brownies ever really healthy? Maybe, maybe not. (Deep, pondering life thoughts by Annie to be continued . . . .) Whatever I call them — Dark Chocolate Coconut Raspberry Bars — can be a dessert or double up for a snack. Made grain-free using cocoa powder and plant-based chocolate powder as the base, these bars came out darkly dense made tart with raspberries.

Decadently Dark Avocado Mousse

I’ve been craving from Avocado Mousse and have been patiently, patientlyyy waiting for my avocados to ripen on the counter. This time, I wanted it to be dark — dark chocolate dark. Dark but even more healthy. You know what that means. I tossed in some of superfood power in Aloha‘s Chocolate Daily Greens (which includes servings of fruits and veggies — even more of a win win). Swapped for cocoa powder for carob, which was not intentional and totally by accident; I meant to buy cocoa but carob isn’t too bad. It has a different flavor than cocoa powder, but the dark chocolate helps blend everything together. A few minor changes and tweaks but still a delicious Dark Chocolate (Superfood) Avocado Mousse.

Snackin’ on Granola

Dark Chocolate Hazelnut Granola with Craisins is the perfect easy and delicious snack. I’ve never made granola with hazelnuts before, but the hazelnuts came out wonderfully toasted; chopped walnuts also work quite well, and are usually my go-t0 nut to add in. The mini dark chocolate chips gives you just enough of your chocolate fix without being overwhelming. With some many options for nuts, dried fruit and spices, you can experiment with what works best with the season or for you. I made this last fall and have been hooked ever since. You can make the granola in bulk and be happily snacking for the rest of the week!
