Easy & Savory Roasted Veggie Farro Bowls for Meatless Monday

This is a meatless meal prep recipe that I can’t believe I haven’t posted sooner, but midterms happened and life. . ., but this is one of those recipes that you’re bummed when your leftovers are gone. I love the chewiness and whole-grain nature of farro, and it’s quite easy to prepare. I had leftover rainbow carrots, haricot verts (think green bean’s skinnier cousin) and rainbow potatoes from slow cooker Italian sausage soup. Roasted in the oven with a little Salz und Pfeffer, rosemary, red pepper flakes and garlic was the right choice. Toss with farro, pistachios, dried cranberries and a quick “dressing” of lemon juice, apple cider vinegar and extra virgin olive oil. Then, you have the perfect Roasted Vegetable Farro Bowls with Cranberries and Pistachios. It’s tart and fresh with the vinaigrette, savory from the veggies and full of texture thanks to the farro, pistachios and dried cranberries.

Copycat Sweetgreen’s Curry Cauliflower Quinoa Bowls

I love sweetgreen. I love their salad dressings, locally sourced ingredients, clean eating philosophy, and the ease to grab a meal. The only downside is that a salad or bowl runs $10-12. I’ve been craving a sweetgreen, but on a budget. I decided to try my hand at their curry cauliflower bowl that’s offered during the fall; the bowl is: quinoa/farro, arugula, roasted curry cauliflower, cilantro, dried cranberries, roasted chicken, sriracha, & cucumber tahini dressing. While not quite the same since their dressings seem to be top-secret, I basically nailed this with my version of Curry Cauliflower Brown Rice Bowls. I used my own homemade dressing, leftover brown rice from sushi stacks, and roasted cauliflower and chicken. If you make the dressing and rice ahead of time, it’s really an easy meal prep.

Keen on Quinoa for Brekkie

This really does taste like cinnamon “toast” crunch! I had just under 1 cup of leftover cooked white/red quinoa from making Buddha bowls, so I thought I’d give this a try. I saw this idea on Cookie + Kate‘s Instagram before going to bed last night; it seemed like the perfect way to get through our 3 hrs of med surg morning lecture and still make it to an afternoon spin (since I haven’t gone in since end of August 🙈).  Fun fact: I like using nuts from Trader Joe’s; they’re much cheaper and more bang for your buck. What a power breakfast this was! The cinnamon and pecans were quite fragrant and added such a great flavor. I know what I’m making next time I have leftover quinoa — Toasted Cinnamon Pecan Quinoa for breakfast. Side note, I might have to try this in a slow cooker…

Bananas for These Trail Mix “Cookies”

I can’t get enough of Banana Cookies. They’re simple — two ingredients simple, easy to make and the result is a tasty, yet satisfying treat. I was trying to find a way for a heartier snack that wasn’t celery and hummus or plain, ol’ raw almonds. I had bananas ripening on the counter, chopped nuts hanging out in the pantry and the idea to somehow incorporate a Kind Bar. Sounds promising, right? I tossed in chia seeds and dried cranberries and the Trail Mix Banana Cookies were born. I would have totally added dark chocolate chips, but I didn’t have any on hand. (Note to self, always have dark chocolate chips on hand. What was I thinking?) Sounds like I’ll just have to whip up batch numero duo and let you know how it goes.

Healthy Tuna Salad On-the-Go

Tuna Mason Jar Salad

Need a quick, healthy salad on the run? I might have had this Tuna Mason Jar Salad for lunch four days in a row last week. Don’t believe me? Try it for yourself. IT’S SO GOOD. Beyond good. I think canned tuna has a bad rep, but this salad gives it a whole new life.  The cucumbers, carrots and sunflower seeds add texture and crunch. The dried cranberries and raspberry balsamic offer a sweet side to balance the earthy kale.
