To Brownie or Not to Brownie?

I didn’t want to call these brownies because I don’t think of these as a true brownies without chocolate chips, so I settled on bars. Plus, are brownies ever really healthy? Maybe, maybe not. (Deep, pondering life thoughts by Annie to be continued . . . .) Whatever I call them — Dark Chocolate Coconut Raspberry Bars — can be a dessert or double up for a snack. Made grain-free using cocoa powder and plant-based chocolate powder as the base, these bars came out darkly dense made tart with raspberries.

Better (Butter-less) Greek Yogurt Brownies

Confession: apparently I don’t have a square baking pan? I realize this every time I need one and never seem to remember to pick one up when I don’t. This explains as to why I baked my brownies in a pie pan and the pieces aren’t perfect squares . . . I made chocolate cookies using Greek yogurt before instead of butter and loved them. Like those, I made Greek Yogurt “Skinny” Brownies, which baked into dense, yummy brownies. These brownies are lower in sugar, low in fat (with the fat being healthier) and more nutrient packed if you use carob over cocoa powder. I tossed in some chopped walnuts and unsweetened coconut for texture. I was rationing my chocolate chips and would totally add more for next time! I’ve really wanted a true dessert versus just grabbing some dark chocolate pieces and/or some dates post dinner. I’ve been dreaming of some Halo Top ice cream on top of these brownies — stay tuned. It’s going to be amazing.

Pass Those Pumpkin Brownies, Please

Oh, man — I’ve done it again: two ingredient Pumpkin Brownies. Just a brownie mix and pumpkin purée. Can it get any better than that? These brownies can satisfy your pumpkin and chocolate cravings, and maintain that fall craze surrounding everything pumpkin.  Like the Black Bean Brownies, the pumpkin purée replaces the eggs, oil and water making the brownies quite dense, moist and chocolatey. You can serve the pumpkin brownies to any adventurous friends or to someone, who may have refused to try any brownies containing the word “beans” (which when written, doesn’t seem that unreasonable); these pumpkin brownies could slowly open the door to healthier, yet delicious brownie options with real pumpkin mixed in. I hope you, your friends or anyone else all enjoy these decadent pumpkin brownies!
