Slowly Savoring This Easy Slow Cooker Chili

This chili recipe isn’t what you’d traditionally think of as “buffalo chicken,” but the flavors are a welcomed change from your standard beef chili dishes. It’s spicy from the hot sauce and a little sweet from the potatoes, whilst still retaining all the typical chili flavors and spices. It simmered all day as I prepped my nursing work, and I had Slow Cooker Sweet Potato Buffalo Chicken Chili in a blink of an eye. I loved the addition of fresh cilantro to brighten the dish. You can gobble down a bowl and avoid feeling sluggish because its fresh ingredients come together so seamlessly. I had leftover frozen slow cooker buffalo chicken from my bowl recipe that I tossed in for literally the easiest chili ever. (In the market for a new slow cooker? Buffalo Chicken Boats FTW

Need a way to consume all of that end-of-the-summer zucchini? These Buffalo Chicken Zucchini Boats will complete your life. I lightened these bad boys up with cauliflower, zucchini and celery to the buff chic mix and paired with my healthy (or at least healthier) Greek Yogurt Blue Cheese Dressing. Cut down on time and use the meat of a plain, roasted rotisserie chicken. It’s ok to indulge every once in a while, especially when it’s roasted chicken and veggies. So have one boats — or two!

Best (& Still Quite Healthy) Buffalo Chic Salad

I stumbled upon this recipe for Buffalo Chicken Meatballs as a Super Bowl appetizer, but then was too busy with my micro homework to make this in time. If it can’t be an app, then a salad sounded light but also hearty and satisfying. I really like Skinny Taste and her healthy twists on classic and popular dishes. Naturally, she had a “Skinny” Greek Yogurt Blue Cheese Dressing to accompany. What pairs well with blue cheese dressing? Celery, carrots, cucumbers and avocado — toss that into the salad. Inspired by my Bang Bang Cauliflower, Buffalo Cauliflower Bites sounded like a natural addition to the metals. It all comes together even better than imagined. I had my coworkers jealous of my lunch. Seriously, Chris wanted to steal it. Get yours jealous too with the Buffalo Chicken Salad.
