Chewy (& Healthy-ish!) Chocolate Chip Cookies with Sea Salt

I think I found the holy grail of chocolate chip cookie recipes! Made with old-fashioned oats, almond flour, and applesauce, these Sea Salt Oatmeal Chocolate Chip Cookies are light and chewy while retaining that classic chocolate chip cookie taste. They’re sprinkled with a pinch of sea salt to accentuate the dark chocolate. Perfectly lightened up, people won’t know the difference that they’re kind of “healthy.” And stay tuned! There may be a pumpkin version of these in the works some time soon…

Cool Down with These Mango Popsicles

In honor of the weather hitting the 90’s here today, here’s how I stayed cool this summer: Mango Coconut Popsicles! These popsicle molds from Target were worth the investment. You can make full batches, half batches, mix and match. Popsicles are a great way to “meal prep” some desserts—easy prep to reap the benefits later. They fall more on the icy end of the spectrum instead of creamy, but swap coconut water for coconut milk for a more decadent treat.

Cozy Up with Some Coconut Chia Pudding

Happy Valentine’s Day! Here’s a little “dessert” to color your day. My parents and I went to First Watch for brunch whilst in Ohio, after such a favorable outing when we were in Florida last May. My mom ordered the AM Superfood Bowl, which consisted of a coconut milk chia pudding topped with bananas, berries and blackberry perseveres and homemade granola. It was delish — literally dessert for breakfast. I usually make chia pudding with almond milk, but full-fat coconut milk was a welcomed surprise. On a whim, I added a pinch of cardamom and the citrus flavor added some levity and brightness to the dish. Enjoy as a snack, topped with fruit and granola for breakfast or with some chocolate for dessert, Coconut Chia Pudding is just one of those things you’ll enjoy again and again.

Edible (& Kinda Healthy) Cookie Dough

The first time I tried Chickpea Cookie Dough, I was like ehhh. The next few times I tried this, I made some changes like less peanut butter, swapping brown sugar for other sweeteners (gotta be more like Toll House, right?) and a bit more vanilla. The changes made me want to grab a spoon immediately; it’s a keeper. I personally think that it’s even better chilledddd. Serve it up on apple wedges, graham crackers or just eat it with a spoon. I personally like the good ol’ chocolate chip version, but play around with it to get your perfect edible cookie dough.

To Brownie or Not to Brownie?

I didn’t want to call these brownies because I don’t think of these as a true brownies without chocolate chips, so I settled on bars. Plus, are brownies ever really healthy? Maybe, maybe not. (Deep, pondering life thoughts by Annie to be continued . . . .) Whatever I call them — Dark Chocolate Coconut Raspberry Bars — can be a dessert or double up for a snack. Made grain-free using cocoa powder and plant-based chocolate powder as the base, these bars came out darkly dense made tart with raspberries.

Cheering for Mango Chia Bowls

Before mangos disappear forever (or at least until next summer), it’s time to try Mango Chia Pudding. Mango season may have passed, but this is such a refreshing breakfast, snack or dessert. Pick a super ripe and juicy mango and you won’t even think to add any extra sugar or sweetener. The cinnamon pairs nicely and bridges the gap between holding-on-to-summer and oh-wow-it’s-already-fall.

Serving Up a Single Serving of Peach Crisp

Excuse me while I go buy more peaches so I can make seconds and thirds . . . . This Single Serving Peach Crisp is BOMB. It satisfies any dessert craving and you’re not tempted to eat the whole pan. It took make maybe 5 min to whip up and then I was immediately drooling as the fragrant smells of peaches, cinnamon and coconut filled my studio. It’s low in sugar, oil and butter free and just plain good. Can’t wait to try this with apples, maybe pears, and whatever else floats my fancy.

Guilt-Free Brownies (Yes!)

I think I found my new cheat brownie recipe. These Five Ingredient Protein Brownies grain free, contains no refined sugar and has a bit o’ protein. Plus it hits the spot when you want a brownie without having a real brownie, so it’s like a guilownie — a “guilt-free brownie” obviously. I’ve really enjoyed making protein muffins lately, so I thought why not try something similar with desserts?

Mmmm, Yummy Yogurt Bark

I don’t even know where to begin. This yogurt bark was great and easy and fun to make. I see many variations cropping up in the near future, like peanut butter banana or strawberry mint or… Like I said, it’s so easy, I’m going to have to gobble up this batch so I can make another. I’ve been looking for something other than dark chocolate to satisfy my sweet teeth and stumbled upon the idea for yogurt bark. Tossed in everything but the kitchen sink, not so patiently waited for this to chill and voila! Vanilla Yogurt Bark. You’ll forget it’s not chocolate, but a delicious frozen treat.
