I’m not sure why I haven’t posted these yet. I love Cauliflower Mashed Potatoes. They’re low carb, so much easier than normal mashed potatoes and taste like the real deal. I used frozen riced cauliflower since that was the easiest for me, but any type will do. Just cook the cauliflower, mix in cottage cheese for creaminess and then garlic and EVOO for flavor. Blend them together and viola! Mashed “potatoes.”

Best (& Still Quite Healthy) Buffalo Chic Salad
I stumbled upon this recipe for Buffalo Chicken Meatballs as a Super Bowl appetizer, but then was too busy with my micro homework to make this in time. If it can’t be an app, then a salad sounded light but also hearty and satisfying. I really like Skinny Taste and her healthy twists on classic and popular dishes. Naturally, she had a “Skinny” Greek Yogurt Blue Cheese Dressing to accompany. What pairs well with blue cheese dressing? Celery, carrots, cucumbers and avocado — toss that into the salad. Inspired by my Bang Bang Cauliflower, Buffalo Cauliflower Bites sounded like a natural addition to the metals. It all comes together even better than imagined. I had my coworkers jealous of my lunch. Nothing Cheesy About This Breakfast
This is my dad’s recipe. We had “Lightened Up” Cheesy Egg Bake for Christmas brunch along with our neighbor’s famous Christmas stollen (a German bread baked with dried fruit and nuts and then dusted with powdered sugar — it’s delicious) and fresh fruit. Cheesy Egg Bake is normally made with bread, full-fat pork breakfast sausage, heavy cream, eggs and cheese. We swapped bread for multigrain, cream for soy milk and pork sausage for the leaner turkey or chicken. It’s really quite easy to make and has many options to make your own. Toss in some veggies, swap eggs for egg whites, experiment with bread…the list goes on. Any way you try it, “Lightened Up” Cheesy Egg Bake is sure to please.
