Meatless Eggplant “Meatballs”

The idea for meatless meatballs has been in my head for some time. I keep circling back to ideas for eggplant or lentils, and settled on trying Eggplant “Meatballs” complete with cannellini beans. Just like you’d make regular meatballs, they have panko and Parmesan as breading and an egg to bind. By baking them, they stay moist in the center with a crispy outside. While I didn’t try them with sauce yet, I think the crispiness will hold its own. All I can do is envision these with some basil marinara sauce or simmering in a vegetable bolognese or turkey bolognese.

Chocolate Chip Cookies + Fig Newtons = These Muffins

These may not be my best looking muffins, but they’re like a chocolate chip cookie and fig newton wrapped into one. They’re dense, the figs are complimented by cardamom and the dark chocolate adds a bittersweet taste. I stumbled upon dried whole figs at a TJ Maxx/Homegoods when home in Maine, but I’m sure you can find them anywhere. As you know, I like making muffins with protein powder so they’re a bit heartier, nutrient-dense and keep me full longer. I reallyyyyy enjoyed these Chocolate Fig Protein Muffins, and they were both friend and boyfriend approved (which are both necessary measures of approval).

The Best Bagel Recipe?!

If you’ve seen these easy bagels floating around social media, they do not disappoint. In honor of it being FriYAY, here’s a bagel recipe to brighten your day. My nursing friend, Jen, tipped me off to Skinnytaste’s new recipe. I loved that Skinnytaste’s is no boil one (because doesn’t everyone want to skip a step?) and comes together in a matter of minutes. I made the recipe even easier by using self-rising flour and Greek yogurt, just like that 2-ingredient flatbread. The bagels still rise and are fluffy, have that golden edge from the egg wash, but with a bit of a tangy flavor. For how quick and easy these are (and healthier!), I think No Boil Bagels are definitely worth that fresh bagel feeling you can get at home.

The Low Carb Mashed “Potatoes”

I’m not sure why I haven’t posted these yet. I love Cauliflower Mashed Potatoes. They’re low carb, so much easier than normal mashed potatoes and taste like the real deal. I used  frozen riced cauliflower since that was the easiest for me, but any type will do. Just cook the cauliflower, mix in cottage cheese for creaminess and then garlic and EVOO for flavor. Blend them together and viola! Mashed “potatoes.”

Poppin’ These Protein-Packed Pumpkin Spice Muffins

This is my second batch of Pumpkin Spice Protein Muffins and they keep getting better. I’ve grabbed two before my first Soul Survivor spin class (it was 60 min) and thank God I did. For being kind of bite-size, they fill you up as a snack or a meal. This morning I had two fresh out of the oven along with some Siggi’s vanilla skyr yogurt. I like the crunch of the pecans and the chewiness from the raisins. The mashed banana and pumpkin make these muffins pretty dense, but in a good way. Pro tip — aka how I enjoy them — serve warm with a cup of cinnamon coffee. Happy weekend!

Happy FriYAY with Low-Carb Pizzas

It’s Friday, so I’m celebrating with a little quick and healthy ‘za. I feel like the weekend rolls around and we all think we’ve “earned” a little indulgence for the weekend. This Tortilla Pizza with Basil & Sausage is just the way to indulge without feeling gross. It requires ingredients you probably already have on hand like whole wheat tortillas, chicken sausage (I always store some in my freezer), tomato sauce and parmesan cheese — it’s that easy. You can obviously swap out the meat for veggies, but don’t make the pizzas too heavy. For a serving size of two tortilla pizzas, it’s just the right amount of pizza without feeling overly stuffed.

Sizzling Skillet Huevos Rancheros

I haven’t posted a breakfast/brunch recipe in a while, and this one is worthy of a post on its own. Meaning “ranch eggs” or “rancher’s eggs,” Skillet Huevos Rancheros is a one pan meal that’s super easy to make and prep ahead of time. You can cook your eggs to however you like, but I like mine runny so they meld with the homemade rancheros sauce or salsa that you make, the refried beans and avocados. I had leftover spinach and zucchini so I tossed it in, but you can’t even tell. I also used a low-carb whole wheat tortilla from Trader Joe’s, but you can keep it authentic and gluten-free with corn ones. If you prep ahead of time, make the sauce, and store the ingredients separately, so you can easily assemble.

Yet Another Excuse for Breakfast Pizza

Pizza for breakfast? Yes, please. Dish me up. I had previously made a breakfast pizza with turkey bacon and a sweet potato crust, so I obviously had to switch things up with a chicken sausage pizza made with a zucchini crust. I was pleasantly surprised that this crust stayed as a crust. (It holds up a little less well when reheated, but still keeps its shape.) This is an easy, fun breakfast or brunch option. Pour the coffee (or those mimosas) and enjoy Zucchini Crust Breakfast Pizza.

The New Trend: Kelp Noodle Bowls

Kelp noodles are so fun! I never knew they existed until I saw this recipe on TIU. These noodles are super low in calories and carbs and virtually without fat. The noodles have a crunch, an al dente texture and a nondescript taste. They kind of remind me of tofu in the sense that they take on whatever flavors you’re cooking with. I tried my hand at Chicken Kelp Noodle Bowls. I added fresh ginger root, garlic, scallions, soy sauce and lime juice for a fun Asian flair. Toss kelp noodles with chicken cooked in coconut oil and shiitake mushrooms, you have such a fun and decidedly different weekday meal. I liked these so much that I went back to Whole Foods to grab more, but they’re out. I’ll have to make these next week with shrimp — stay tuned!
