Toasted Coconut & Spiced Carrot Oatmeal For Breakfast

Too many carrots from your garden? Have them for breakfast as a Coconut Carrot Oatmeal Bake. What can I say? I love cardamom and the citrusy flavor it gives to the cinnamon, ginger, carrots & apple. Like my other oatmeal bakes, this is lightened up with   applesauce instead of butter, coconut milk and egg whites. I love the crunch from the walnuts and carrots, and sweetness from the raisins and apple. Oatmeal bake is a great meal prep and if you can use your over in the summer, you can still enjoy the end result hot or cold. Add a little yogurt and maple syrup for a deliciously easy breakfast.

Beat the Heat with This Berry Beet Smoothie

It’s a heat wave in Boston. Cool down with this vibrant Berry Beet Smoothie. Look at that color! The magenta is amazing, and you can’t even taste the beet. The mango and berries leave it perfectly sweet. Enjoy this smoothie as breakfast or a snack – -it’s utterly refreshing either way.

Poppin’ These Protein-Packed Pumpkin Spice Muffins

This is my second batch of Pumpkin Spice Protein Muffins and they keep getting better. I’ve grabbed two before my first Soul Survivor spin class (it was 60 min) and thank God I did. For being kind of bite-size, they fill you up as a snack or a meal. This morning I had two fresh out of the oven along with some Siggi’s vanilla skyr yogurt. I like the crunch of the pecans and the chewiness from the raisins. The mashed banana and pumpkin make these muffins pretty dense, but in a good way. Pro tip — aka how I enjoy them — serve warm with a cup of cinnamon coffee. Happy weekend!

I’ve been taking a little hiatus from posting — midterms, the 4th, a summer cold . . . Here’s a recipe for Blueberry Chia Protein Muffins that I made to get me through midterms two weeks ago. I swear I had a childhood blueberry muffin recipe that used orange juice and orange zest. Obviously I had to incorporate that orange flavor into my TIU muffin adaption. It’s subtle and complements the blueberries perfectly.

A Summer “How To” Starring Pineapple

So fun fact. I bought this organic whole pineapple at Whole Foods in Beacon Hill for $2.50. It yielded about 3-4 c (since I ate some in the process and can’t get an accurate reading). If you buy pre-cut pineapple pieces, it’s $4-7 depending on how many cups you bought. To save some many and reap all of the benefits, here’s How to Cut a Pineapple. Pineapples are high in vitamin C, fiber and other vitamins and minerals. Grill it, freeze it, keep it raw, transform it into a salsa. They’re also high in natural sugar and a great sweetener for smoothies, muffins, bowls, oats — anything.

Not Gingerly Eating These Ginger Matcha Protein Muffins

The muffins are back for meal prep Sunday! I tried another recipe from TIU. I liked the Piña Colada Protein Muffins so much that I decided to try a Snickerdoodle version, so here we are with Ginger Matcha Protein Muffins. (I foresee a twist with blueberry muffins in the near future, so you’ve been warned.) I have the Matcha Green Tea packets from Trader Joe‘s so I used those to cut down the “greenness” that matcha sometimes has. I also added some ginger and doubled the bananas to combat this, but the doubled banana made the muffins a bit flat and less likely to rise. I even had my mom taste test them when I went home to surprise my dad for his birthday! They’re yummy, not too sweet and a great pick-me-up.

How to Slice Mango like a Pro

Cutting a mango may be a little intimidating, especially when it has that large pit in the center. With a sharp knife, it’s really quite easy. Once you have your perfectly sliced mango, top oats, smoothies bowls or tacos. Add to salads or salsa. Slice, prep and freeze servings for smoothies. Use for anything! Buzzing for these Blackberry Cardamom Oats

So I may or may not have grabbed a handful of this Whole Earth Sweetener packets from Starbucks last weekend 🙈 . . . oops. They’re sitting out for the taking, so I decided why not try them? Not my fault I don’t add sugar or sweetener to my coffee. (Full disclosure: I grabbed three, which I think is a respectable “grab.”) I was grabbing spices to make Indonesian Inspired Quinoa Bowls and saw cardamom hiding out in the back of my pantry. Cardamom has such a nice citrus flavor that I wanted some oats with grapefruit on the side — but the 2.0 version. Thus, I made Blackberry Cardamom Overnight Oats with a Broiled Grapefruit. The grapefruit is amazing! This would be so good on the grill or as a dessert. I foresee myself stalking up on grapefruit during my next grocery run to make this again. Plus, the broiled grapefruit seems like a great standalone side for a brunch or the beginnings of a dessert.

Who said you need to buy sweetened yogurt when you can make your own, even better, Banana Walnut Parfait? Flavored yogurt tends to have as much as 25 g of sugar PER SERVING.Don’t believe me? Check out Yogurt With More Sugar Than a Twinkie via Huffington Post. A delicious snack, light breakfast or dessert, this parfait has less added sugar using plain Greek yogurt as a base, adding only a pinch of agave nectar and plays off of the banana’s natural sweetness.

Coconut Almond Butter Bites

Despite it being a heat wave this summer, I had this urge to bake in July. To be completely honest, I’m not entirely sure why I never posted this recipe. I think I wanted to try it again to perfect it, but I honestly think it’s fine as is. I wanted something still summery (cue the coconut) and something that would keep me sated (hence the almond butter). I wanted a cookie and snack hybrid and somehow stumbled upon Coconut Almond Butter Bites as my end product. Bam!
