Want a different toast and a clever way to use up that ricotta from lasagna? Here’s Lemon Ricotta Toast. It’s light and satisfying, without being over heavy or filling. I love the bright acidity the lemon juices adds to the creamy ricotta, simply flavors with salt and red pepper flakes. Pumpkin seeds add a delightful crunch, while spinach adds some color and a little extra something-something.

Obsessed with this Avo Eggs in a Hole


I warned you I’d be on a kick after making the Eggs in a Hole with a Garlic Kale Hash I saw in SELF‘s New Year’s Challenge. (The challenge was active for the month of January and was complete with a meal plan and workouts, but still see if you can check out the recipes!) This time making eggs in a hole, I added some creamy avocado, fresh herbs, a kick and tang from banana peppers and protein in the turkey. Just the right amount of flavor and freshness, I give you Eggs in a Hole with a Spicy Avocado Cilantro Hash.

Easy Peasy Eggs in a Hole


Ermahgawd this is so satisfying. Overall, Eggs in a Hole with a Garlic Kale Hash:

  • Takes 15 min to whip up
  • Can be easily double, tripled — whatever you want
  • Is grainy and hearty, yet somehow still light and full of flavor

Do I need anything else to sell you on this? SELF created a New Year’s Challenge complete with a meal plan and workouts. This recipe for eggs in a hole was in their breakfast line-up and may be my new favorite breakfast; it’s a nice switch from scrambled eggs, shakshuka or breakfast sandwiches. My mom was never a fan of eggs, especially ones with a runny yolk. When I was bragging to my friends how delicious my breakfast was, they couldn’t believe I never had this as a kid. Well, this is “adulting” then at its finest, and it’s never too late to try new things!

French Toast to Tickle Your Fancy


Mmmmm, French toast. I don’t know the last time I had French toast. I’ve been a bit tired of omelets, quiche, avocado toast, smoothies, overnight oats…you know the drill, so I tried my hand at Multigrain French Toast with Mixed Berries. I swapped in multigrain bread, egg whites and almond milk. The multigrain bread added a gnarly texture. Top with an easy berry sauce, maple syrup and powdered sugar. Great and easy brunch!

Staying “Toasty” in the Snow


Yesterday was a good day; a very solid assortment of food kind of day. Despite the blizzard pummeling the Northeast, Boston was graced with a couple inches to still have the feel of winter without being overwhelming. (Btw, thank GOD Boston was spared. We had enough snow last year to last a decade.) I went to the gym yesterday morning, but was saving my big meal for brunch to go with my roommate and one of my best friends from college. I needed something satisfying, savory and that would hold me until we commenced for brunch. Cue the Basil Sriracha Avocado Toast. We had a successful meal at The Tip Tap Room in Beacon Hill. We sipped on mimosas, Blood Maries (just Perin) & bourbon cocktails (see pictures below). We sampled the Everything Bagel Breakfast Sandwich, the Smoked Cheddar & Corn Griddle Cakes with Bacon Maple Syrup (they tasted like cornbread pancakes — delish) and the Tip Tap Signature Omelet packed with brie, asparagus and shiitake mushrooms (pictured below). Given it was snowing and we wanted to stay warm, I also concocted some Blizzard Sangria. Think a quick and easy cranberry and citrus sangria. To put the icing on the cake, toss in a slice of Ernesto’s Caprese pizza for dinner in the North End. Sounds like a good Saturday, right?

Nothing Cheesy About This Breakfast

"Lightened Up" Cheesy Egg Bake

This is my dad’s recipe. We had “Lightened Up” Cheesy Egg Bake for Christmas brunch along with our neighbor’s famous Christmas stollen (a German bread baked with dried fruit and nuts and then dusted with powdered sugar — it’s delicious) and fresh fruit. Cheesy Egg Bake is normally made with bread, full-fat pork breakfast sausage, heavy cream, eggs and cheese. We swapped bread for multigrain, cream for soy milk and pork sausage for the leaner turkey or chicken. It’s really quite easy to make and has many options to make your own. Toss in some veggies, swap eggs for egg whites, experiment with bread…the list goes on. Any way you try it, “Lightened Up” Cheesy Egg Bake is sure to please.

The Easiest Eggs & Toast…Maybe Ever

Eggs in a Mug with Avocado Toast

After reading BuzzFeed’s “19 Breakfasts You Can Make In A Mug,” I wanted to test out their idea for eggs. Seemed simple enough. With it being so hot and muggy this summer, I haven’t been too inclined to make eggs and have the stovetop emitting so much heat. I was skeptical, but then again my Banana Bread in a Mug turned out just fine. Also surprising, but I’ve never made avocado toast before. I know, right? Who am I? It was beyond good. Seasoned with sea salt and red pepper flakes for a small kick, I’m seriously in love with avocado toast. I must have been living under a rock. The eggs in a mug turned out to be deliciously simple. I tossed in egg whites, chopped baby spinach and Parmesan. You can really add whatever you’d normally want in your omelet to have the perfect Eggs in a Mug with Avocado Toast. This truly was a 5 minute breakfast!

Sweet & Tangy BBQ Dinner

Open Faced BBQ Chicken Sandwich with an Apple Slaw (& Sweet Potato Fries)

Open Faced BBQ Chicken Sandwich with an Apple Slaw (& Spicy Garlic Sweet Potato Fries). Try saying that title five times fast. I lightened up your traditional sandwich by making it oped faced and adding multigrain bread. Who has BBQ without fries or chips? Not me. I added some baked sweet potato fries tossed with garlic and spicy red pepper flakes. The apple slaw is worth trying alone. If you’re feeling particularly creative, I’d add some lemon zest to the slaw for that extra pop of flavor, which I did not do. but that’s why there’s next time . . . The slaw is light and fresh with a bit of crunch to balance the acidity and tanginess from the BBQ sauce. With sweet apples and fresh lemon juice, you won’t be able to take just one bite!

The Berry Best Toast

Strawberry Almond Toast

Happy Valentine’s Day, everyone! A breakfast, a snack or dessert, this Strawberry Almond Toast is obviously simple, but a sweet addition. Also, the red just seemed like an appropriate theme and start to my day. I’ve always found peanut butter to be overpowering, so I wanted to give almond butter a try. I know, I know — who doesn’t like peanut butter? I’ve never been peanut butter’s biggest fan. Almond butter though is an entirely different story. Smooth, creamy, mildly flavored. Slathered across a warm and hearty piece of multigrain toast, topped with fresh strawberries and this toast is the perfect breakfast or snack on a seeing red kind of day.
