You know what I’ve been missing in my life? French Toast. Especially Single Serving Baked French Toast that I can whip up and have ready in less than 30 minutes. You’d never know this version is fully vegan; the bread is perfectly “soaked” in almond milk, vanilla and almond butter. While you don’t miss the eggy-ness of this toast, its cinnamon still makes you think of your childhood dish. Celebrating Toast Tuesday with Lemon Ricotta Toast

Want a different toast and a clever way to use up that ricotta from lasagna? Here’s Lemon Ricotta Toast. It’s light and satisfying, without being over heavy or filling. I love the bright acidity the lemon juices adds to the creamy ricotta, simply flavors with salt and red pepper flakes. Pumpkin seeds add a delightful crunch, while spinach adds some color and a little extra something-something.

The Simply Sensational Shakshuka

I went out to brunch with my friends, Ali and Sam, and naturally Saturday brunch means being basic and heading to Newbury Street. We settled on Stephanie’s, somehow all ordered a side of home fries (apparently sharing wasn’t an option) and sipped on their spicy house-made Bloody Mary’s. (I’m slowly becoming a Bloody Mary fan, and even I want to buy their mix, so I’ll just let that sink in.) We were looking for a savory kind of breakfast — something hearty and filling. I tested out their shakshuka and am so glad I did. So glad, in fact, that I decided to recreate it at home. This looks complicated, but I promise you it’s not. The chopping is a bit time consuming, but otherwise it’s a dump and step back while this cooks kind of recipe — my favorite. I added in more finely chopped veggies for nutrients and depth, but the real flavors are the tomatoes and the spices. Any tomatoes work, but heirlooms are just so pretty and in season now. It would be so easy to serve as a brunch or dinner and you can tailor the poaching of the eggs to being over easy or soft/hard boiled. I’ve already stocked up on the ingredients to make Shakshuka a second (and a third) time.

The Never-Go-Hungry Breakfast Sandwich

Power Breakfast Sandwich

I don’t know what I just made, but this Power Breakfast Sandwich should be illegal. It’s been quite warm up my fourth floor apartment in Boston sans AC.  For the breakfast, I’ve been sticking to things that are cool and no fuss — overnight oats, smoothies, yogurt parfaits or cereal. Lately, they haven’t been cutting it. I’ve been craving a breakfast sandwich. Not a usual ham, egg and cheese, but something downright different. Plus, I saw this mouthwatering avocado egg sandwich on Hungry Betches instagram account. (All of her food looks ridiculous — ridiculously tasty that is.) I knew I need avocado in this sandwich after seeing that. Sriracha sounded like a good pairing, and I have hummus begging to be used in my fridge. My mom got the idea of pairing hummus and eggs after making one of Giada De Laurentiis‘ veggie breakfast wraps with hummus and poached eggs. Toss in some spinach over a multigrain bagel, and an unlikely grouping of ingredients to make the best breakfast I’ve had in ages.

The Berry Best Toast

Strawberry Almond Toast

Happy Valentine’s Day, everyone! A breakfast, a snack or dessert, this Strawberry Almond Toast is obviously simple, but a sweet addition. Also, the red just seemed like an appropriate theme and start to my day. I’ve always found peanut butter to be overpowering, so I wanted to give almond butter a try. I know, I know — who doesn’t like peanut butter? I’ve never been peanut butter’s biggest fan. Almond butter though is an entirely different story. Smooth, creamy, mildly flavored. Slathered across a warm and hearty piece of multigrain toast, topped with fresh strawberries and this toast is the perfect breakfast or snack on a seeing red kind of day.
