Autumn Oatmeal Bake with Pumpkin & Figs

It’s fig season! Bet you thought I was going to say pumpkin? That, too. I made a berry coconut oatmeal that became a summer staple, and with fresh figs in season and pumpkin filling the grocery store shelves, this only seemed like the natural progression. Although fall is officially here, we’re having a heat wave in Boston. Thus, it only seems fitting to enjoy this morning’s Pumpkin Fig Oatmeal Bake cold with some Greek yogurt, a drizzle of maple syrup, and a little almond butter.

Power Piña Colada Protein Muffins

Snack time! Who knew muffins could be healthy and filling without leaving you sluggish? I always like doing Tone It Up’s daily workouts and following their weekly schedule and have done so on and off for the last three years. However, I think I do a fairly good job of eating healthy, so I’ve never tried their meal plan. I’ve had the equivalent of two muffins as a breakfast or three minis as a snack and I must say — I was surprisingly satisfied. You miss that post-carb/sugar crash. Packed with protein powder and using banana and pineapple as natural sweeteners, these muffins are a great way to grab breakfast or snacks on the go!

The Perfect Breakfast: Strawberry Rhubarb Parfait

Zesty Strawberry Rhubarb Compote Parfait

It’s rhubarb season, strawberry season AND hot summer days season. Normally I have the luxury of enjoying fresh rhubarb back home in Maine — straight out of the garden. Thank God Whole Foods in Boston delivered; you can buy individual stalks when in season. My mom and I originally found this strawberry-rhubarb compote recipe from Skinny Taste a couple summers ago. The tartness of the rhubarb is perfectly balanced with sweet and juicy strawberries to make a sauce. This time, I added in lemon zest and a juicy ripe peach. Layer over your favorite yogurt and granola for a Zesty Strawberry Rhubarb Compote Parfait — the perfect on-the-go breakfast! (Or hey — even dessert.)
