I love eggs, and I love any time that I have an excuse to eat eggs for dinner. Eggs, Chickpeas, & Prosciutto in a Creamy Tomato Sauce was the perfect impromptu dinner. Ted and I saw this recipe, while we had prosciutto and soppressata to use up from a local salumeria called Bricco in Boston’s North End. This seems like a fitting meal, as we leave the North End for the other side of the harbor in Charlestown. We ate this as a dinner, and I added more spices and red pepper for a quick. I cut the heavy cream in half and swapped for almond milk, again, because that’s what we have on hand in our fridge. Plus, almond milk is a bit healthier than heavy cream. Pair with this bread to soak up the juices and that runny yolk. Oh, and don’t be like me and only add 7 eggs; apparently I miscounted!

Smoky Vegetarian Mexican Soup
First soup to celebrate the crisp autumn air! It only seems fair to kick off soup season with Smoky Corn, Red Pepper, & Brown Rice Soup. It’s deliciously “smoked” thanks to smoked paprika, but a hearty Mexican soup with corn, beans, and rice. Make this a one pot meal by easily cooking the rice right in the soup. This soup was so tasty with some nonfat Greek yogurt (swap for sour cream!), a little lime juice to brighten it, and some sweet potato chips to add a little sweet and salty to the smoky heartiness.
Positively Perfect One Pan Veggie & Sausage Roast
I found these cute, petite rainbow carrots at Trader Joe’s a few weeks ago and knew I wanted to make a veggie roast. The summer I was in Munich, it was quite unseasonably cold and rainy. My friend, Katie (aka Katinka), roasted Bavarian pork sausage, apples and potatoes. This is my take on it: Roasted Rainbow Veggies with Apple Chicken Sausage. The leeks get crispy like Brussels sprouts and the carrots, zucchini and sweet potatoes are tender after the roasting. The dried thyme makes your kitchen smell AWESOME (emphasis on awesome clearly), and the apple sausage is a sweet, savory addition to balance out the garlicky cauliflower mashed potatoes and sweetly cooked veggies. This may be the easy one pan dish and the quintessential fall meal.

Stay Warm & Cozy with These Harvest Bowls
I made a similar roasted veggie bowl last year with sweet potato instead of squash, but since then, I’ve somehow perfected this. Maybe it’s because the sauce is juuuuust right; I mixed a little hummus and tahini, apple cider vinegar and dijon mustard. Besides making the dressing and having the quinoa cooked ahead of time, this bowl is really a one pan meal then. You can roast all the veggies at once, adding kale at the end and then keeping the chickpeas separate is they don’t get soggy. These Roasted Vegetable Harvest Bowls keep you full without feeling overly stuffed and kind of even make you feel like you just indulged at Sweetgreen without leaving your home.

Bow Down to this Healthy Bolognese
What a dinner. This bowl of Turkey Bolognese over Zoodles hit the spot. I’m not usually one for a meat sauce, but this was on par for a North End restaurant. (Ok, not quite, but it gives the original a run for its money if you lighten up the dish.) The sauce is really simple to make and can be prep as a one pot dish ahead of time. It can easily be frozen, but does dry out a tad and lose a bit of its sauciness. The carrots and bell pepper add flavor and color to the sauce, while the red wine brings a little acidity and depth. As it’s almost September (– time is litttterally flying), try making this on one of those it’s-just-becoming-cool-and-crisp fall nights.
Homemade (Almost) Better-than-Takeout Curry Noodles
This may not be my most photogenic dish, but it’s one I made to satisfy my Thai take-out craving (and my wallet), and I found myself looking forward to my leftovers. These Curry Chicken Noodles are so easy to tailor based on any curry or veggies that you use. The same goes for noodles; you can use boring spaghetti for the same effect or wide rice noodles or thick udon or ramen-like Chinese noodles.

One Pan Grilled Chicken Buddha Bowls
I’m not even sure what I threw together last night, but this was a great impromptu dinner. Roasted some veggies, already had grilled chicken from Whole Foods, might as well grab an avocado . . . and Grilled Chicken Buddha Bowls with Roasted Veggies are born. Yesterday was a bit chilly and grey and using the oven didn’t sound like the worst idea, even though it’ll be July this weekend. I tossed sweet potatoes, chickpeas and kale in rosemary, garlic and paprika. After roasting in the oven, the sweet potatoes were tender, while the chickpeas and kale were crispy with a crunch. The kale was almost like kale chips, which is never a bad thing. Paired with that perfectly charred taste from the grilled chicken and creamy avocados, these bowls hit the spot. Although grain-free, I’m still calling this a buddha bowl since all these pieces came together in that perfectly assembled way.
Peanutty “I-Can’t-Believe-They’re-Kelp Noodles” Bowl
I’m on a kelp noodle kick. This time I switched it up and made a version with shrimp and edamame in a peanut sauce. Yummmm. Even though it’s pretty low-carb, these bowls are packed with protein to keep you feeling full. (If you’re like omg that’s it? Split between 2 servings instead of 3 or add another pack of noodles.) I really like how these noodles have a distinct crunch and adopt whatever flavor profile you’re using. They’re perfect for a Thai-inspired dish, so have at it and dig in to Peanut Shrimp Kelp Noodle Bowls.

One Pan Salmon Dinnerrrr
Mustard Salmon with Roasted Veggies is such a great and quick mid-week dinner. This recipe will be added to the rotating arsenal. I saw a video for this on Facebook from Eating Well. It looked so easy and simple to make that I just had to try it. Since I don’t have a spice grinder and didn’t feel like buying more spices, I tried a marinade that our family friend, Maura, whisked together when we were in Florida. Just EVOO, Jack Daniel’s whole grain dijon mustard (soooo much flavor) and lemon juice. Asparagus, sweet potatoes and salmon are baked in the oven while you poach an egg. While you can skip the egg to make this a true “one pan” dinner, the yolk adds some saucy texture and more protein overall.
Tasty Taco Tuesday
Love me a one pan meal. I’ve been craving tacos after I saw the idea on BuzzFeed for one pot meals (see the first entry if you’re curious). I haven’t made anything taco related in a looooong time — not since Not Your Average Taco Salad. Whole Foods had a sale on lean ground beef yesterday so I knew the timing was perfect. I made my own taco seasoning courtesy of Gimme Some Oven while the meat browned. The hardest part of this was chopping the onion, peppers, zucchini and jalapeño, which in actuality isn’t that hard. The veggies plus spinach pack in more nutrients than your traditional taco. You mix everything together and assemble without missing any of the taco flavors.
