Cajun-Style Shrimp & Grits (Instant Pot)

IMG_8742

Shrimp and Grits. This was the meal I continually ordered when Ted and I travelled down South to Savannah, Charleston, and Hilton Head back in November. While not the “classic” version, i.e. the one with heavy cream and butter–also delicious, but not what I want on a daily basis–, this version of shrimp and grits is literally bursting with flavor. Pork andouille sausage was the only type of andouille sausage I could find, but it offers all the fat and salt you need, which is why I omit the butter, heavy cream, and added salt. I opted to mix in more Southern and Cajun vegetables like collard greens and orange and green bell peppers. While not authentic, the peppers melt in your mouth, and the collard greens add a pop of color and nutrients. Plus, this all comes together in the Instant Pot for a one-pot meal.

Creamy Autumn Harvest Risotto

This was an everything-but-the-kitchen sink kind of recipe–couple of Brussels sprouts here, some carrots over there, butternut squash frozen and ready to use. I whipped up a batch of Autumn Veggie Risotto yesterday because we had the most random produce and veggies in our fridge and freezer. The rainy, cold weather and upcoming football game created the perfect setting for a hearty dish. Risotto is comfort food at its finest. No need for heavy cream or cups of cheese to create a rich meal. The continuous stirring breaks down the rice’s starches to give risotto its gelatinous consistency and creaminess. I stirred in some mascarpone cheese leftover from making vegetable bolognese. The flavors of the vegetables speak for themselves accentuated by Parmesan cheese’s sharp bite.

Smoky Vegetarian Mexican Soup

First soup to celebrate the crisp autumn air! It only seems fair to kick off soup season with Smoky Corn, Red Pepper, & Brown Rice Soup. It’s deliciously “smoked” thanks to smoked paprika, but a hearty Mexican soup with corn, beans, and rice. Make this a one pot meal by easily cooking the rice right in the soup. This soup was so tasty with some nonfat Greek yogurt (swap for sour cream!), a little lime juice to brighten it, and some sweet potato chips to add a little sweet and salty to the smoky heartiness.

Veggie & Pesto Packed Primavera Pasta Salad

IMG_8702.JPG

The warm weather has finally rolled in, and it’s beginning to feel like summer. Verdant grass, trees, and flowers call for vibrant veggies to be used. I’ve been craving pasta and also pesto lately, so it only makes sense to use both for a pasta salad. In this Primavera Pasta Salad, your veggies can be a combination of fresh and frozen. I usually have frozen edamame and peas on hand in my freezer among some others (like cauliflower pieces and cauliflower rice). Fresh asparagus, peppers, and celery add a bite and a crunch. Add lemon juice, pesto, and spices for a summery and bright take on pasta salad.

Bountiful Black Bean Soup

IMG_8700.JPG

It’s spring in Boston! Meaning it’s moving to be consistently above freezing during the day. Here’s a bright, vibrant soup to transition from those cold, bundled up winter days to I-just-need-a-light-jacket. Black Bean Soup is a pantry staple. Chances are you have a can of black beans or a bag of dry black beans sitting around in your pantry. Add some veggies and spices, top with avocado, Greek yogurt (or sour cream) and some lime juice for a colorful, light, yet filling soup.

Summer Caprese Bowls with Shrimp & Zucchini Ribbons

IMG_8680.JPG

Summer is about fresh veggie and herbs. I can’t think of a better way to use tomatoes, zucchini and basil than in a Summer Caprese Zoodle Bowls. This is a take on the simple mozzarella, tomato and basil Italian salad using ribboned zucchini as “noodles,” a mixture of creamy ricotta and fresh mozzarella, and succulent tomatoes. This would be so amazing with some crusty bread dipped in EVOO. It’s a deliciously different version of your classic caprese dish.

Hearty, Feel-Good Plant-Based Curry Soup

IMG_8607

Want a soup that immune-boosting? Stress-relieving? Energizing? Anti-inflammatory? According to Daily Harvest‘s Carrot + Coconut Curry Soup, it’s all of those things wrapped into a yummy bowl of soup. I tried Daily Harvest on a whim, and it didn’t disappoint. Completely fresh ingredients delivered to your door as soups, smoothies, overnight oats, chia parfaits and grain bowls. You add liquid (if needed) and heat them up or blend them. I enjoyed their soup so much (that besides ordering it again), I tried making a big-batch copycat version. This didn’t look quite as colorful and delectable as Daily Harvest’s, but it’s a pretty damn close copycat. Zucchini Coconut Curry Soup is a hearty, plant-based soup packed with veggies, spices and flavor, and I added cubed tofu for some protein. I let julienned zucchini star along with carrots, peppers, cauliflower and spinach. Fresh ginger and cilantro add fresh flavor to the curry. This soup must be good when I sent two servings home with my parents and got my mom’s approval. Happy Meatless & Marathon Monday here in Boston! Grab a cup of soup to stay warm on this rainy day!

The “Feel Good” Italian Sausage Soup

img_8536.jpg

Can we talk about these color? Ermahgawd, this soup was almost too pretty to eat. Having a cold, this warm and hearty veggies made Slow Cooker Italian Sausage Soup hit the spot. The only downside to these beautiful, rainbow veggies is that the purple carrots and potatoes give the broth a purple, rosy hue, but I’m not complaining. For not knowing what I was going to cook this past Sunday, this came together quite nicely. The soup is basically veggies, Italian chicken sausage, some Italian spices and homemade veggie stock. Let it cook and simmer in a slow cooker until the potatoes and carrots are tender.  (In the market for a new slow cooker? Check out Reviews.com for The Best Slow Cooker.)

Slowly Savoring This Easy Slow Cooker Chili

IMG_8600

This chili recipe isn’t what you’d traditionally think of as “buffalo chicken,” but the flavors are a welcomed change from your standard beef chili dishes. It’s spicy from the hot sauce and a little sweet from the potatoes, whilst still retaining all the typical chili flavors and spices. It simmered all day as I prepped my nursing work, and I had Slow Cooker Sweet Potato Buffalo Chicken Chili in a blink of an eye. I loved the addition of fresh cilantro to brighten the dish. You can gobble down a bowl and avoid feeling sluggish because its fresh ingredients come together so seamlessly. I had leftover frozen slow cooker buffalo chicken from my bowl recipe that I tossed in for literally the easiest chili ever. (In the market for a new slow cooker? A Summer Stew for Any Occasion

IMG_8589

This was a summer stew I made, but froze two servings to pull out when I needed a quick meal. I did just that on the 30th after traveling to Maine and Ohio for the holidays. I enjoyed a bowl sans toppings on New Year’s Eve and New Year’s Day to stay warm during this arctic blast of weather. Since the stew was summer inspired and based, you can really taste the lemon juice and appreciate summer produce like kale and zucchini. The sweetness from the raisins and sweet potatoes balance the bitterness from the quinoa and kale and acidity of the lemon juice. I added almond milk for a splash of creaminess. I love that this has garlic, ginger and turmeric, which are anti-inflammatories and aid in digestion — just what we need post-holiday binge and indulgences. Serve hot and savor that bowl of Turmeric, White Bean & Quinoa Stew.
