I’ve been itching to make this for a long time, and finally bit the bullet and found all these nuts and seeds. I gravitate toward overnight oats in the summer and for clinical days because it’s so easy to make when you have an early morning. Loni Jane’s version did not disappoint; her all nuts and seed take on bircher muesli is a refreshing break from oatmeal. I enjoy my grain-free porridge, but this is much chewier, crunchy and all-around nutty. I swapped sultana (dried grapes), mango and cacao nibs for dried cranberries, since that’s what I had. If you treat this like overnight oats or granola, this is definitely up your alley. I hesitate to use “superfoods,” but Burcha (A Nuts & Seed Bircher Muesli) is really just full of whole foods and nuts, healthy fats and lots of fiber. This kept me full all morning at clinical with that satisfied-that-I-didn’t-overeat feeling. Literally count down the hours that I can have this for breakfast again!

A P-P-P-Peanut Buttery Banana Breakfast
Happy Meal Prep Sunday! Here’s an overnight oats recipe that’s got me through 5 am wake ups for clinical and kept me feeling full (in a good way) until I could grab a snack after 10 am or sometimes not until after noon. Peanut Butter Banana Overnight Oats are a sure way to make it through your morning. Plus, they’re your classic peanut butter and banana flavors with some walnuts for a crunch and protein power to keep you full.
A Figtastic Breakfast
Whole Foods has had a figs sale for the last few weeks and it’s been fantastic. (Perhaps “figtastic” is a better choice?) In honor of meal prep Monday, here’s Figs & Pecans Overnight Oats. Overnight oats are some of my meal prep favorites, especially in the summer because it’s just as good cold. It’s also quite easy to throw together and uses summer’s fruit produce: figs, strawberries and rhubarb to natural sweeten your no hassle breakfast.
Positively the Perfect Pineapple Oats
Remember that pineapple I just chopped up? Already putting it to good use in some oats as Pineapple Almond Butter Oats. I’ve made this dish both as hot oatmeal and as cold overnight oats, and I think I prefer the oatmeal version since the pineapple becomes just a little bit sweeter and leaches out some of its natural sugar. Simple breakfast for the morning of or a great meal prep. Almond butter adds a nice, creamy kick to complement the sweeter, tropical pineapple.
CocoNUTS for Chocolate Almond Coconut Oats
My summer semester is right around the corner. While we have most Fridays off, I’m not looking forward to being gone from 6 am to 9 pm on some days for class and clinical. I’ve been looking at meal preps to ease through the day and free up my mornings, and overnight oats, smoothies or quiche are my go-to. I made these overnight oats during finals last month, and I’ve been prepping Chocolate Almond Coconut Overnight Oats ever since. Chocolate gives a nice decadent burst and the combo of almonds, almond extract, coconut milk and coconut flakes all give a fun twist on your morning. Happy meal prep!

Buzzing for these Blackberry Cardamom Oats
So I may or may not have grabbed a handful of this Whole Earth Sweetener packets from Starbucks last weekend 🙈 . . . oops. They’re sitting out for the taking, so I decided why not try them? Not my fault I don’t add sugar or sweetener to my coffee. (Full disclosure: I grabbed three, which I think is a respectable “grab.”) I was grabbing spices to make Indonesian Inspired Quinoa Bowls and saw cardamom hiding out in the back of my pantry. Cardamom has such a nice citrus flavor that I wanted some oats with grapefruit on the side — but the 2.0 version. Thus, I made Blackberry Cardamom Overnight Oats with a Broiled Grapefruit. The grapefruit is amazing! This would be so good on the grill or as a dessert. I foresee myself stalking up on grapefruit during my next grocery run to make this again. Plus, the broiled grapefruit seems like a great standalone side for a brunch or the beginnings of a dessert.

Crazy about Carrot Cake for Brekkie
I’m back on an overnight oat fix (and smoothies, but we’ll get leave that for another time). We’ve had some stressful exam weeks approaching finals so meal prepping has been key. I whipped up a couple jars of some different flavors like Carrot “Cake” Overnight Oats. These are so easy to make, you can enjoy them hot or cold and you have all the flavors of carrot cake without the huge indulgence. I also promise you won’t even realize the carrots are there. They finer you grate them, the more they disappear. (It’s like a zucchini bread turned oatmeal if you still need a hard sell.)
Berry Deliciously Spiced Overnight Oats
I haven’t made overnight oats in a while and I must say, what a way to get back in the game. It’s (hopefully) getting warmer with spring officially trying to make its way into the New England weather and the daylight slowly growing longer. Although I usually grab cinnamon and vanilla for breakfast items and/or smoothies, this was different. The combo of raspberries, cranberries, and spices were great. Served hot or cold — you choose just how to enjoy Cinnamon Vanilla Berry Overnight Oats.

Just Peachy Overnight Oats
With the unseasonably warm weather during the end of May here in Boston, this take on the overnight oats was a no brainer: peaches and almond. When I was little, the minute peach season rolled around, my mom would serve Almond Peaches for dessert, as a side for dinner, as a snack . . . you get the idea. Why not for breakfast? The almond extract perfectly balances with the peaches and almond milk. Hence, Almond Peach Overnight Oats were developed. To make it even better, I think i’ll toss in slivered almonds next time I make it for a crunch, but I promise, it’s perfectly balanced as is.
Mad for Mango
I’m still on my mango kick after my trip to Florida a few weeks ago. Why not incorporate some mango into overnight oats? Cue the ground ginger and you have an unusually good combination of flavors. The sweetness from juicy, ripe mangos means no added sweetener is needed. (Doesn’t mean you can’t add more, but you probably don’t need to.) Cue the ground ginger with fresh berries and you have an unusually good combination of flavors with this Mango Ginger Overnight Oats.
