The Perfect Paleo Pancakes

Some mornings, you just neeeeeeed pancakes for breakfast. And on some of those mornings, you need the easiest pancakes ever for breakfast — ones with just bananas and eggs. I usually make my Banana Oat Pancakes when I’m in the pancake mood, but I’ve been curious to try something simpler. Hence the genesis of Paleo Banana Pancakes. I whisked together very ripe bananas, eggs and egg whites. (I have used just 2 eggs, but liked the flavor for the second batch with an egg/egg white mix. You can also put the ingredient in a small food processor or blender if you really want a smooooooth batter.) Topped with some PB2 and maple syrup, these pancakes just hit the spot.

Paramount Pumpkin Pancakes

Pumpkin Banana Pancakes
Detox the day after Thanksgiving with some Pumpkin Banana Pancakes. A spin off of my Banana Oat Pancakes and my Chocolate Banana Pancakes, these are sure to delight. Unlike the other two versions, I used a blender (a food processor works as well) to seamlessly incorporate the pumpkin purée and effortlessly combine all the ingredients. The consistency resembles your more traditional pancakes, but is still packed with all the flavor you’d expect from a fall brunch.

Bananas Aren’t Just for Banana Bread

Banana Oat Pancakes

I love thick, doughy pancakes, bagels or muffins, but it’s a love-hate relationship; great in the moment, but horrible once you’re stuffed before your day has even begun. These Banana Oat Pancakes are made from oatmeal, egg whites and bananas are a quick, delicious start to your morning. I’ve shown them above with pomegranate seeds and blueberries and the sauce is poached berries. Pair that with some grapefruit and coffee, and you’re good to go.
