The idea for meatless meatballs has been in my head for some time. I keep circling back to ideas for eggplant or lentils, and settled on trying Eggplant “Meatballs” complete with cannellini beans. Just like you’d make regular meatballs, they have panko and Parmesan as breading and an egg to bind. By baking them, they stay moist in the center with a crispy outside. While I didn’t try them with sauce yet, I think the crispiness will hold its own. All I can do is envision these with some basil marinara sauce or simmering in a vegetable bolognese or turkey bolognese.

Crispy Flaky Coconut Fish
I told you I had big plans for those coconut flakes. I give you Coconut-Crusted Tilapia with a Massaged Kale Salad. I completed the meal with some Coconut Banana Cookies. I also think this would be quite delish with half a sweet potato or a gnarly piece of multigrain bread. For anyone with gluten-free needs, you could easily use gluten-free panko. Another great option to get your weekly dose of seafood or to bypass any meat on Fridays during Lent. The coconut flakes add a subtle flavor and pungent Parmesan cheese and earthy green kale balance the mild fish. Don’t worry dinner — I’ve got you covered.
Tasty Turkey Meatballs
It’s that time of year. If you’re like me and in the Northeast, you probably got some snow today. Toss in the time change with early darkness, and you’re in need of a hearty, cold-weather meal. I don’t think turkey is as flavorful as beef, but adding the fresh basil and red pepper brings the turkey meatballs to a whole new level. Make a large batch to freeze or plan meals ahead, place the meatballs over spaghetti squash, zoodles or whole-wheat pasta, and you have a lovely meal. I enjoyed my turkey meatballs over spaghetti squash, sautéed cherry tomatoes and zucchini, and a spicy marinara sauce. Top with fresh basil and parmesan and just how can you say no?
