Veggie & Pesto Packed Primavera Pasta Salad

The warm weather has finally rolled in, and it’s beginning to feel like summer. Verdant grass, trees, and flowers call for vibrant veggies to be used. I’ve been craving pasta and also pesto lately, so it only makes sense to use both for a pasta salad. In this Primavera Pasta Salad, your veggies can be a combination of fresh and frozen. I usually have frozen edamame and peas on hand in my freezer among some others (like cauliflower pieces and cauliflower rice). Fresh asparagus, peppers, and celery add a bite and a crunch. Add lemon juice, pesto, and spices for a summery and bright take on pasta salad.

New Twist on Pesto

Happy Meatless Monday! I had too much cilantro and arugula hanging out in my fridge. It’s also in the 40’s today. (Um, what’s up, Mother Nature? It’s basically June.) I really wanted a dinner that’s hearty and warm. I whipped up an Arugula Cilantro Pesto to top some ravioli and sweet potato pasta to combat this chilly, rainy weather. The fun part about this recipe is that it’s really a place to start. You start with these basic proportions and add more cilantro and/or arugula as needed, some lime juice here or there and maybe parm; it’s all to taste. It’s the perfect meal prep and now I’ll add it to my freezer to use this summer!

Easy, Yummy Pesto Pasta (& “Pasta”)

Look at that twirl action! With a mixture of spiralized zucchini, affectionately known as “zoodles,” and tricolor angel hair pasta, this spring pasta dish was packed with homemade pesto. Who says a nice dinner has to be expensive and a chore to make? Pasta is relatively cheap and can be bought in bulk. You can make batches of pesto and stock them in the freezer for future use. I used a can of Whole Foods tuna and spices, herbs and veggies in stock in my fridge and pantry. Viola! I whipped up Pesto Angel Hair Pasta with Tuna to feel a little decadent, a wee bit fancy twirlin’ my pasta and quite cozy as the cool weather rolls back in.

Modern Take on the Classic Caprese

Caprese Spaghetti Squash with Pesto Grilled Chicken

When I think of summer, I think of fresh garden vegetables and herbs. Growing up in Maine, we always had fresh basil growing which meant homemade pesto. Depending on the summer, we had tomatoes, peppers, green peppers, green beans, zucchini or maybe a combination of those. Fresh basil and tomatoes immediately makes me think of a caprese salad. Not sure about you, but raw tomatoes are very hit or miss for me. Cooked tomatoes I love. Raw? Ehhh. Depends on the day. Something about spaghetti squash as a pasta salad, fresh mozzarella, fresh spinach, cherry tomatoes all tossed with homemade pesto and chicken sounded absolutely irresistible. Well, it is.
