Hearty veggie stew alert! If you haven’t figured out, I enjoy “cleaning out my fridge” and trying to use up every veggie–and sauce–possible. Harissa is a Northern African spicy chili pepper paste, consisting of mostly roasted red peppers. Depending on the style, some can be really mild or wildly spicy. If you use up any veggies in your fridge like onions, peppers, greens, and sweet potato with stuff in your pantry like a can of tomatoes or leftover grains and lentils, you can easily pull together a simple, hearty stew like Harissa Vegetable Soup. By using plant-based ingredients, it’s still high in protein. Plus, it’s a win-win for a deliciously health meal in exchange for cleaning out your fridge and pantry.

Pumpkin Pie in a Glass
Although it’s fall, Halloween’s 70° weather had me craving this Pumpkin Pie Smoothie last week. Rich in antioxidants and vitamin A, pumpkin is not an obvious choice for smoothies. However, it’s thick and creamy nature allows it to easily acquire flavors like the spices of pumpkin pie. It’s just decadent enough to be breakfast, dessert, or a snack, but healthy thanks to bananas’ and dates’ natural sweetness. Healthy fats in the almond butter and plant-based protein round this smoothie out as a nutritious option.
Enjoy This Creamy, Chilled Take on “Golden Milk”
I’ve been on a mission to find a hot, turmeric latte in Boston, but after this smoothie, I’ve been doing it all wrong. Minimalist Baker gave me this idea, but I decided to use golden beets (my new favorite root vegetable!) and frozen mango to add more of that golden color, extra nutrients and a bit of sweetness. Just like that cleansing ginger smoothie, I tossed in whole ginger root for a spicy bite. With all the spices you’d find in golden milk and a creamy coconut base, this Golden Milk Smoothie is going to be a chilled version of your turmeric staple.

A Figtastic Breakfast
Whole Foods has had a figs sale for the last few weeks and it’s been fantastic. (Perhaps “figtastic” is a better choice?) In honor of meal prep Monday, here’s Figs & Pecans Overnight Oats. Overnight oats are some of my meal prep favorites, especially in the summer because it’s just as good cold. It’s also quite easy to throw together and uses summer’s fruit produce: figs, strawberries and rhubarb to natural sweeten your no hassle breakfast.
Orange You Glad You Found this Orange Smoothie
Goooooood morning and happy July! Wake up with the randomly delicious combo of an Orange Avocado Mango Smoothie. The avocado is creamy and adds a natural thickness to the smoothie. The mango adds sweetness, along with the orange, also tossing in a little vitamin C and natural juice. As breakfast or as a snack, it all perfectly blends together into a decidedly different smoothie from your usually berries and banana.

Simple, Spiced Sweet Potato Bread
UM, YUM! I stumbled upon Izy Hossack’s recipe for this Sweet Potato Bread and I’m beyond glad I did. Her site, Top with Cinnamon, is exactly what I love with cooking and food blogs: clean, simple and straight to the point. I tweaked her recipe and used whole wheat flour, added more spice and swapped the oil base. My only compliant is the loaf came out dense and did not rise very well, but this could be because I kept it true to Izy’s original, which is vegan. Despite not very much added sugar, the agave and sweet potato add just enough sweetness that’s accentuated by the spices. The nuts give the bread a hearty crunch. I whipped up a Greek yogurt spread to serve and the tanginess was the perfect balance.
