Mmmmm, French toast. I don’t know the last time I had French toast. I’ve been a bit tired of omelets, quiche, avocado toast, smoothies, overnight oats…you know the drill, so I tried my hand at Multigrain French Toast with Mixed Berries. I swapped in multigrain bread, egg whites and almond milk. The multigrain bread added a gnarly texture. Top with an easy berry sauce, maple syrup and powdered sugar. Great and easy brunch!

Must Have Muesli
I found this idea for Apple Swiss Muesli during the hot, muggy month of August after my mom’s suggestion. It’s a breakfast that’s carried through to the cold weather, just swapping kiwi and coconut flakes for Superfood Poached Berries and hearty Pumpkin Spice Granola. (A cranberry orange zest with a dash of nutmeg may be in the future to hail the upcoming holidays.) It’s especially easy to make the night before in a Mason jar to have breakfast covered the next morning or to whisk away with you on your commute. This version of muesli is so easy to make and experiment with toppings to make your perfect breakfast.
Positively the Berry Best Poached Berries
After making the German Chocolate “Cake” Overnight Chia Oats, preparing oats of some sort the night before has become a staple for breakfast. It’s really easy to make, great for a work week, and has maximal taste for minimal effort. I’ve been waiting for the right time to make Poached Berries again — rich in color, full of flavor and just simply fruit and sweetener if needed. I added some of Aloha‘s The Daily Good Berry Blend; it has two servings of fruits and vegetables in one packet from 14 superfoods (wow!). Clearly their Berry Blend was the match to my poached berries. Throw in the overnight oats and we have ourselves a winner: Berry Good Overnight Oats.

The Versatile Berries
Poached Berries are great — so easy to make, full of flavor, and can be made ahead of time. Another recipe my mom showed me (thanks, Mom!). The berries are especially tasty because by poaching them, you remove the hassle of washing each serving and decrease the time fresh berries will perish; instead, everything’s done in one step and viola! fresh berry sauce for days.
