The “Feel Good” Italian Sausage Soup

Can we talk about these color? Ermahgawd, this soup was almost too pretty to eat. Having a cold, this warm and hearty veggies made Slow Cooker Italian Sausage Soup hit the spot. The only downside to these beautiful, rainbow veggies is that the purple carrots and potatoes give the broth a purple, rosy hue, but I’m not complaining. For not knowing what I was going to cook this past Sunday, this came together quite nicely. The soup is basically veggies, Italian chicken sausage, some Italian spices and homemade veggie stock. Passing 2017 with a Potato Thyme Quiche

Have to close out 2017 with a bang, right? This Thyme Potato Crust Quiche was a winner. Remember my sweet potato crust quiche? Here’s a take on that. I love breakfast potatoes and hash browns for brunch. I’m not sure what it is about the starchy side, but I associate seasoned potatoes with breakfast. I made a potato crust for this eggy dish and added thyme to complement the sharpness of the parmesan and give flavor to the potatoes. For a quiche, it’s really filling from the potatoes, and adding a dash of hot sauce (or ketchup) does juuuust the trick.

The One Pot Wonder: Rice & Veggie Detox Soup

Yesterday was such a gross Monday and today is a rainy, dreary Tuesday. I made a big ol’ batch of this Brown Rice Veggie Soup last night using some pantry ingredients and some of the veggies I need for slow cooker buffalo chicken bowls tonight (recipe coming soon!). The soup just came together with no real plan. It’s so fun to toss in a little of this . . . a little of that . . . and watch everything come together. I added a little vindaloo curry to taste since the soup already smelled like these flavors would compliment the garlic and ginger well. The brown rice and copious amount of veggies make a hearty soup you can’t wait to have.

One Pan’s the Way to Go

Roasting veggies always seems to be winter thing, but what happens when you toss in some spring asparagus, fresh rosemary, lemon juice and lemon zest? A bright, easy dinner. One pan kind of easy. Also great when you’re in a rush and can just pop everything in the oven and let it run its course. Roasting the chicken keeps it oh-so-juicy and prevents it from drying out. Before you know it, you’ll be savoring that One Pan Lemon Rosemary Chicken & Veggies saying, “that was easy.”
