Dressing Up Quinoa & Lentils

IMG_8805

Do you ever make something and you’re actually excited for your leftovers and to eat it again? That was this. I give you Cilantro Lentils & Quinoa with Raisins and Walnuts. This can be a side or a base to a meal. You can mix in feta or goat cheese. This would go quite well with roasted root veggies. Pair with grilled chicken. You literally can’t mess it up. I roasted potatoes, beets, and spinach and added some feta for a meal or kept it cold and mixed it into a spinach salad with a lemony vinaigrette. It works well with parsley instead of cilantro for all of you who are cilantro adverse, but fresh herbs with lemon juice and lemon zest keep this light and bright.

Social Distancing with Cinnamon Walnut Quick Bread for Sunday Brunch

IMG_8767.JPG

You’ve been warned. I said I’d end up baking during these crazy pandemic times. After irrationally craving cinnamon rolls–it is a Sunday morning–, I settled on making a version of Joanna Gaines’ cinnamon swirl quick bread from her cookbook, Magnolia Table. As a Christmas present, I’ve looked through this cookbook, but haven’t had a time to tackle any recipes. Given my brunch cravings and the copious time on our hands, I settled on making Cinnamon Walnut Quick Bread, but a lightened up version of this classic. I still think it’s crazy that the original recipe for this bread was supposed to have 2½ c sugar and a third of a cup of oil. Here, we use just under three-fourths cup sugar, less than a tablespoon of oil, and mix coconut and raisins. It’s perfect right out of the oven, but I recommend it cooling longer than we did, since we were a bit too eager to slice it up, thus left with some crumbly pieces. Ted and I enjoyed this warm, served with a cup of coffee and a side of Greek yogurt and strawberries (see first photo after recipe!). It was the perfect stay-at-home Sunday brunch.

Vibrant & Bright Oatmeal Raisin Cookies

While I do not claim for these cookies to be true Anzac biscuits, the basis for the ingredients screamed like an Annie cookie. Without eggs, the cookies held up quite well despite lacking eggs when families sent these biscuits to the Australian and New Zealand Army Corps–hence Anzac–circa WWI. The true recipe calls for oats, flour, sugar, butter, “golden syrup,” and coconut. I found a recipe for these in Sweet, and I decided to tweak these to be my own. I call them Coconut Oatmeal Cookies with Raisins & Lemon. They’re still sweet (despite using only 3/4 c sugar instead of almost 2 c), bright from the cardamom and lemon zest, and perfectly chewy thanks to the oats and raisins. They’re like an updated version of your grandmother’s oatmeal raisin cookies.

Toasted Coconut & Spiced Carrot Oatmeal For Breakfast

IMG_8537.JPG

Too many carrots from your garden? Have them for breakfast as a Coconut Carrot Oatmeal Bake. What can I say? I love cardamom and the citrusy flavor it gives to the cinnamon, ginger, carrots & apple. Like my other oatmeal bakes, this is lightened up with   applesauce instead of butter, coconut milk and egg whites. I love the crunch from the walnuts and carrots, and sweetness from the raisins and apple. Oatmeal bake is a great meal prep and if you can use your over in the summer, you can still enjoy the end result hot or cold. Add a little yogurt and maple syrup for a deliciously easy breakfast.

A Summer Stew for Any Occasion

IMG_8589

This was a summer stew I made, but froze two servings to pull out when I needed a quick meal. I did just that on the 30th after traveling to Maine and Ohio for the holidays. I enjoyed a bowl sans toppings on New Year’s Eve and New Year’s Day to stay warm during this arctic blast of weather. Since the stew was summer inspired and based, you can really taste the lemon juice and appreciate summer produce like kale and zucchini. The sweetness from the raisins and sweet potatoes balance the bitterness from the quinoa and kale and acidity of the lemon juice. I added almond milk for a splash of creaminess. I love that this has garlic, ginger and turmeric, which are anti-inflammatories and aid in digestion — just what we need post-holiday binge and indulgences. Serve hot and savor that bowl of Turmeric, White Bean & Quinoa Stew.

Poppin’ These Protein-Packed Pumpkin Spice Muffins

IMG_8555.JPG

This is my second batch of Pumpkin Spice Protein Muffins and they keep getting better. I’ve grabbed two before my first Soul Survivor spin class (it was 60 min) and thank God I did. For being kind of bite-size, they fill you up as a snack or a meal. This morning I had two fresh out of the oven along with some Siggi’s vanilla skyr yogurt. I like the crunch of the pecans and the chewiness from the raisins. The mashed banana and pumpkin make these muffins pretty dense, but in a good way. Pro tip — aka how I enjoy them — serve warm with a cup of cinnamon coffee. Happy weekend!

Cozying Up with Rosemary Red Lentils

IMG_8543Happy meal prep, Sunday! Besides the balmy weather lately (and it coming up again this weekend), it’s been a bit chilly some night to start off fall and October. I made this one pot dish of Rosemary Sweet Potato Red Lentils and it’s beyond easy to make — it’s another one of those dump and stir kind of recipes. It’s cozy and surprisingly sweet with the sweet potatoes and raisins, but in a good, savory, dish-me-up-more kind of way. Rosemary is perfect for the fall and colder months and using fresh herbs will make your kitchen smell heavenly.

Zealously Eating Zucchini “Bread” for Breakfast

Zucchini Bread Oatmeal

Happy September!! I’m still in denial. It was just yesterday I was at a Third Eye Blind concert with my friend, Steph. It was mid-June and naturally we were complaining summer was “already gone” in that way you complain about how bad your hair looks when you know you look like a bombshell. Complaining to complain because we knew we had that reassurance of July’s and August’s hot and sunny days ahead. Now we have a right to actually complain since it’s literally September, but on the bright side, you know all know what that means — it’s oatmeal season!!! Who’s excited?! I woke up this morning to a cool enough breeze that I needed a long sleeve shirt to sip on my morning cup of pumpkin spice coffee. (If you can’t tell, I’m really embracing this weather change…) With zucchini season coming to a close now, it’s  that late summer vegetable that you have so much you never know what to do with it. I decided Zucchini Bread Oatmeal would be the perfect outlet. You’d never know you’re consuming zucchini in this sweet breakfast of nutmeg and cinnamon, plump raisins and walnuts for texture.
