Ted got me an Instant Pot for my birthday this year, and we’ve been trying to incorporate it into our everyday cooking for quick meals. I’ve been craving my homemade marinara sauce and lasagna, but I didn’t want to make a big pan. Instead, I give you Lasagna Soup. All the flavors of lasagna pulled together for a quick and easy meal. Using chicken breast and chickpea-based lasagna noodles, the soup becomes filling and packed with protein to keep you sated throughout the day. Top with a creamy ricotta-parmesan mixture to get all the feels of lasagna wrapped into a hearty soup.

Summer Caprese Bowls with Shrimp & Zucchini Ribbons
Summer is about fresh veggie and herbs. I can’t think of a better way to use tomatoes, zucchini and basil than in a Summer Caprese Zoodle Bowls. This is a take on the simple mozzarella, tomato and basil Italian salad using ribboned zucchini as “noodles,” a mixture of creamy ricotta and fresh mozzarella, and succulent tomatoes. This would be so amazing with some crusty bread dipped in EVOO. It’s a deliciously different version of your classic caprese dish.

Celebrating Toast Tuesday with Lemon Ricotta Toast
Want a different toast and a clever way to use up that ricotta from lasagna? Here’s Lemon Ricotta Toast. It’s light and satisfying, without being over heavy or filling. I love the bright acidity the lemon juices adds to the creamy ricotta, simply flavors with salt and red pepper flakes. Pumpkin seeds add a delightful crunch, while spinach adds some color and a little extra something-something.

Lounging Around with This Veggie Lasagna
Mmmm, there’s something about a lasagna baking in the oven that brightens your day. I had a lot of fun making this, since it was a way to use up some produce in my fridge and make my own marinara sauce. Paired with no boil lasagna noodles from Trader Joe’s and my fridge produce, this Veggie Lasagna was delicious and super easy. Mixing veggies directly into the ricotta mixture and using less cheese lightens up this lasagna, while still keeping all of the flavors. I made the marinara sauce, while I sliced the zucchini and peppers, minced the cauliflower and mixed together the ricotta. Then you layer everything, bake it and anxiously wait for it to be done.
Another Kale Recipe, but in a Creamy Ricotta Quiche
I had some leftover ricotta after making Spaghetti Squash Lasagna, and ricotta adds a whole new level of creamy to this quiche. The nutmeg complements the ricotta, parmesan and kale perfectly. You can definitely add a crust to this quiche, especially if you’ll be serving this that day or eating leftovers the day after. When I make this for the week, the crust is too soggy 4 days out and doesn’t keep well. With a crust or without, either way, Kale Ricotta Quiche is yummy in my tummy.

Lightened Up Lasagna
I have a confession. Well, actually I have two I suppose. The first is that I don’t own an 8×8 or 9×9 pan so hence why my lasagna looks like a pie (and sheet pan was way too big for this). Might need to change that… The second is that I haven’t made lasagna since moving to Boston. Crazy, right? After assembling and making Spaghetti Squash Lasagna, I realized I’ve been missing ricotta in my life. I made a homemade red sauce in the slow cooker (recipe here, minus the meatballs and plus a hearty amount of red pepper flakes) and cooked the spaghetti squash ahead of time. The key to keeping this a true lasagna is removing the excess water from the spaghetti squash. Then you can really pack the squash to make a thick layer Then you can layer to your heart’s desire. This lasagna is lightened up with less cheese, chicken sausage and swapping noodles for spaghetti squash. Ignore the poorly plated end result because a) it was too dark to take a picture of the whole pan and b) the slice is an odd shape thanks to the pie pan, but I assure you that it’s truly fullllll of flavors.
