One Pan Salmon Dinnerrrr

Mustard Salmon with Roasted Veggies is such a great and quick mid-week dinner. This recipe will be added to the rotating arsenal. I saw a video for this on Facebook from Eating Well. It looked so easy and simple to make that I just had to try it. Since I don’t have a spice grinder and didn’t feel like buying more spices, I tried a marinade that our family friend, Maura, whisked together when we were in Florida. Just EVOO, Jack Daniel’s whole grain dijon mustard (soooo much flavor) and lemon juice. Asparagus, sweet potatoes and salmon are baked in the oven while you poach an egg. While you can skip the egg to make this a true “one pan” dinner, the yolk adds some saucy texture and more protein overall.

Easiest Savory Sesame Salmon Salad

My dad flew out of Boston this weekend, so naturally my mom sent down some salmon and chickpea fesenjan from Minimalist Baker (delish, btw) down from Maine. I had some leftover bok choy and scallions in my fridge, which are the makings of a perfect salad.  Sesame salmon and tahini go oh, so well together. I whipped up an easy dressing and had the best lunch: Sesame Salmon Salad with a Tahini Dressing.

Scrumptious Sesame Salmon Bowls

I think I’ve had an Asian cuisine-inspired kick lately. First, the Daikon & Carrot Salad. Then, the Pho Soup. Now, these Sesame Salmon Brown Rice Bowls. This Sesame Curry Marinade for salmon is my go-to all by itself. It’s absolutely delicious, especially on grilled salmon in the summer, accompanying grilled vegetables. It’s my mom’s recipe, and you almost never need to find another marinade because it’s that good. It originally calls for toasted sesame seeds, but she found the seeds mostly burn while cooking so she substituted sesame oil. It may even be good as a salad dressing — who knows! As one of my last meals at home before moving to Boston, my mom combined this Sesame Curry Marinade with salmon, brown rice and fresh veggies. What a keeper. It was somehow light and heartier, flavorful and packed with veggies. I’m sure this will crop up in the future with new vegetable combinations.

Summer Salmon

I really, really like salmon. Not just like, but enjoy eating it. Whenever I go home to Maine, it’s usually one meal my mom can be sure that I will request. Normally, we make a soy-curry based marinade, but thanks to Pinterest, I stumbled upon this new combo two summers ago. We found a new summer recipe and another great idea for salmon. The combination of spices gives just the right amount of kick, while the creamy avocado salsa balances the spice. Even if this isn’t used for salmon, this spice-avocado combination is perfect for any white fish or chicken. Continue reading “Summer Salmon”
