Happy Memorial Day! This may be my new favorite “pasta salad-esque” recipe: Soba Noodles with Carrots, Asparagus & Shrimp. The colors are vibrant, the veggies are different, and I love the amount of fresh basil in this. Serve hot, warm or cold, any temperature will do to enjoy these soba noodles. Soba noodles are made from buckwheat flour (check packaging to ensure they’re gluten-free) and higher in fiber and protein compared to your standard pasta. Paired with edamame and shrimp, the protein and fiber will fill you up and satisfy your pasta cravings.

Savory Sesame Soba Salad

I can’t even get over this because IT WAS THAT GOOD. When I moved to Boston, I can honestly say I had never been to a Whole Foods before. The closest one in Maine was Portland and Ithaca was graced with Wegman’s. With a Whole Foods up the street from MGH and my apartment, I frequent it quite often and stop by their Prepared Food Bar, especially on nights when cooking just seems like an ordeal. I’ve had their sesame noodle salad before and decided to try my hand at my own version. I added beef, cucumber and bell pepper to mine. I served it cold like Whole Foods and it was just what I needed on a near 60°F day in Boston. (Yep, that’s right. Kicking off February with crazy warm weather.) This recipe for Sesame Beef Soba Noodle Salad is definitely here to stay.

Spring into Summer with Vegetable Spring Rolls

These vegetable rolls are super spicy, but so delicious. They’re light and fresh with the mint and basil leaves, while being fiery and savory all at once. I tested them twice, and decided I like the version with the added avocado and cucumber much better than the original recipe. The cucumber gives an extra crunch, and the creaminess of the avocado balances the extreme kick from the sriracha chile sauce. As a snack, lunch or dinner, these vegetable rolls are easy and delicious — so much so you’ll be ready for more before they’re even finished!
