Healthy chocolate muffins!? Is this a thing? Absolutely. I feel like I’ve been killing this muffin meal prep game. I love having these as a snack or before a workout. Mixed Berry Chocolate Protein Muffins are no exception. You satisfy your chocolate craving as a yummy breakfast or snack. I used my strawberry rhubarb compote to act as the berries, but feel free to use mashed raspberries instead; plus, I don’t know about you, but there’s something I love about the way blueberries bake into muffins.

A Figtastic Breakfast

Whole Foods has had a figs sale for the last few weeks and it’s been fantastic. (Perhaps “figtastic” is a better choice?) In honor of meal prep Monday, here’s Figs & Pecans  Overnight Oats. Overnight oats are some of my meal prep favorites, especially in the summer because it’s just as good cold. It’s also quite easy to throw together and uses summer’s fruit produce: figs, strawberries and rhubarb to natural sweeten your no hassle breakfast.

French Toast to Tickle Your Fancy

Mmmmm, French toast. I don’t know the last time I had French toast. I’ve been a bit tired of omelets, quiche, avocado toast, smoothies, overnight oats…you know the drill, so I tried my hand at Multigrain French Toast with Mixed Berries. I swapped in multigrain bread, egg whites and almond milk. The multigrain bread added a gnarly texture. Top with an easy berry sauce, maple syrup and powdered sugar. Great and easy brunch!

Ravenous for Rhubarb

It’s rhubarb season. Normally I have the luxury of enjoying fresh rhubarb back home in Maine. In Ithaca, I bought some rhubarb at the Farmer’s Market last weekend. While my family usually makes a simple rhubarb tart (a household favorite), my mom and I found this Strawberry Rhubarb Compote recipe from Skinny Taste a couple summers ago, when the rhubarb was abundant and seemed to eternally grow. The tartness of the rhubarb is perfectly balanced with sweet and juicy strawberries to make a sauce that perfectly pairs with yogurt, ice cream, pancakes, shortcake…the possibilities are endless!
