Fall Take on Cornbread with Pumpkin Cornbread

Pumpkin Cornbread may be my new favorite cornbread recipe. Sometimes cornbread can dry out a wee bit as it cools or when served as a leftover. Not this version. The pumpkin blends seamlessly, and you won’t feel overwhelmed by a pumpkin flavor. Paired with extra virgin olive oil, the cornbread isn’t dried out. We enjoyed this with buffalo chicken chili. Plus, both the chili and cornbread use pumpkin purée, so you won’t feel guilty about opening a new can or having any leftover sit in your fridge (or check out more recipes using pumpkin). You’ll find yourself grabbing piece after piece, just like Ted when he ate half the pan!

Cast Iron Skillet Honey Cornbread

Since it’s been a chilly spring in Boston, we’ve been eating chili and cornbread. My grandparents lived in Belfast, Maine, and this recipe was my grandmother’s, which is why my family recipe is called Belfast Corn Muffins. They’re best served hot and right out of the oven. I made some tweaks by baking them directly in a cast iron skillet and drizzled honey on top, hence why I named these Skillet Honey Cornbread. With the summer upon us, these could be a staple for a barbecue, accompany the grill, or coming up for the Fourth. Honey highlights the natural sweetness and baking in a skillet gives it a crispier edge.

A Spin on Lemonade & Piña Colada

This may be my new summer drink, so much so that we made this twice in once weekend. Frozen Coconut Lemonade will be your new favorite drink to cool down and sip a decadent version of lemonade. I made this both as a cocktail and a mocktail. I’d suggest the full-fat coconut milk for a mocktail and using the proportions below for a cocktail. Either way is delicious. It’s sweet, tart, rich, and zesty.

Gooey, “Buttery” White Chocolate Strawberry Blondies (Gluten-free!)

Do you ever make a recipe that you just want to eat and eat? That’s these White Chocolate Strawberry Blondies. They’re gooey, melt, rich, and sweet while using applesauce and almond butter for butter and also gluten-free. As I write about these blondies, I’m literally salivating thinking about eating one. They’re very tasty and the perfect spring or summer treat, packed with fresh strawberries and white chocolate chips.

Sweet Potato Bread for Breakfast

March has been a weird month. As a nurse practitioner, it’s the year of the nurse. However, with the coronavirus pandemic knocking on our door (or literally at our door), I wasn’t expecting the year of the nurse to be quite like this. I deal with stress by cooking and baking. You should maaaybeee expect some baking recipes to come. I started on this sweet potato bread recipe before the pandemic broke out, and man, this breakfast bread is good. After some tweaks, it’s finally ready to share. Oats and almond flour are the “flour” or grains and applesauce and Greek yogurt act as the butter and oil. Have you had Starbucks’ pumpkin loaf when it debuts each fall? This Sweet Potato Breakfast Bread is that good, but a little healthier for you. It’s spiced, just the right amount of sweet, and pairs oh-so-well with your bitter cup of coffee in the morning or a mug of tea.

Chewy (& Healthy-ish!) Chocolate Chip Cookies with Sea Salt

I think I found the holy grail of chocolate chip cookie recipes! Made with old-fashioned oats, almond flour, and applesauce, these Sea Salt Oatmeal Chocolate Chip Cookies are light and chewy while retaining that classic chocolate chip cookie taste. They’re sprinkled with a pinch of sea salt to accentuate the dark chocolate. Perfectly lightened up, people won’t know the difference that they’re kind of “healthy.” And stay tuned! There may be a pumpkin version of these in the works some time soon…

Tantalizing Tahini Brownies

I’ve been baking lately. Ted is enjoying batches of brownies, as I try to perfect the recipe and I think I’ve found it. Tahini Brownies. A simple take on brownies using tahini and applesauce as a substitute for butter, while still leaving the brownies fluffy without being dry. Adding seasame seeds to the top gets them nice and toasted as the brownies bake and bring out even more sesame flavor complement that dark chocolate. If you’re feeling extra indulgent, drizzle the top with extra tahini and sprinkle with extra chocolate chips.

The Best Homemade Spicy Ginger Tea

This is my new favorite tea. But really. It’s easy to make and bursting with spice. I’ve been making a variation of this tea since the New Year, and I think I finally perfected the recipe in the last few weeks. I’ve been sipping on cups of tea as is, with some almond milk for a latte-like treat or in addition my plain, black coffee a little coconut creamer in the mornings for a dash of flavor and depth (add 1-3 teaspoons!). Ready in 15 minutes, you’ll be so excited to sip on some homemade Spicy Ginger Tea.

Buzzing for This Honey Walnut Banana Bread

Is there anything better than banana bread in the oven? I was debating if I should go the peanut butter and chocolate chip route or honey walnut, and I settled on the latter (which just means I’ll have to save some bananas to bake up a new kind!). I loved the crunch of the walnuts and floral notes that the honey added. Whilst best straight out of the oven, the loaf freezes well to be enjoyed at a later date, like when you’re skiing up in Vermont. Using Soul Bee powered honey, this Honey Walnut Banana Bread is a fun take on your standard loaf.
