I haven’t posted in while partly because I’ve been adjusting to working full-time as a nurse practitioner and partly because sometimes you need a break to find joy again. These Oat Muffins are worth coming out of a recipe hiatus. They’re a spin on your classic bran muffins, but easier to make since I, for one, am more likely to have oats on hand instead of bran. Mix in walnuts, cranberries, and coconut for a heartier option. Using unsweetened applesauce and vanilla skyr yogurt, you can’t even tell these muffins are oil-free. Enjoy as breakfast or as a snack. (Ted even added chocolate chips and almond butter.) They’re so tasty that before you know it, you’re left with two muffins to use for photos–oops!

You Won’t Even Know There’s Cauliflower in This Smoothie
Don’t hate it until you try it: Raspberry Açai Cauliflower Smoothie. I’m a sucker for trying new food items, especially when I see these unsweetened açai purée packets continually pop up on multiple nutritionist recommended grocery lists. Açai (“ah-sigh-EE” but don’t even ask me to correctly pronounce this; I still butcher the name) is chuck full of nutrients and antioxidants due to its deep purple color — similar to blueberries and blackberries. Look for unsweetened packets in the freezer section making them easy to store and easy to have on hand. You can find them at Trader Joe’s for $4.49 or Whole Foods for $6.99 (at least that’s what it’s going for in Boston proper aka Beacon Hill). Since the purée packets are unsweetened, I added banana and frozen pineapple for some natural sugar. Frozen cauliflower adds nutrients and texture, and you can’t even tell there’s cauliflower in this thing.

Yes, Another Pumpkin Recipe: Pumpkin Parfait
In the wise words of my roommate, Dee, “Kiss fall goodbye because winter is coming, ya betches.” Apparently it’s crucial I post this Pumpkin Pie Parfait recipe in case we get some early snow to dash our fall dreams. Pumpkin Spice Granola over a sweetly, spiced pumpkin layer and vanilla yogurt of choice. (Do I sense a vanilla frozen yogurt could be a substitute?) As breakfast or a mid-afternoon pick-me-up, this parfait is going to make you wish you stumbled upon it sooner.

The Perfect Breakfast: Strawberry Rhubarb Parfait
It’s rhubarb season, strawberry season AND hot summer days season. Normally I have the luxury of enjoying fresh rhubarb back home in Maine — straight out of the garden. Thank God Whole Foods in Boston delivered; you can buy individual stalks when in season. My mom and I originally found this strawberry-rhubarb compote recipe from Skinny Taste a couple summers ago. The tartness of the rhubarb is perfectly balanced with sweet and juicy strawberries to make a sauce. This time, I added in lemon zest and a juicy ripe peach. Layer over your favorite yogurt and granola for a Zesty Strawberry Rhubarb Compote Parfait — the perfect on-the-go breakfast! (Or hey — even dessert.)
